Got a firearm on you or back at home? Your bill will be slashed. This is a new policy for Dueling Irons on Schneidmiller Avenue in Post Falls, but owner Thomas Didra has always been passionate about the Second Amendment and teaching others that the vast majority of gun owners are responsible. Didra has gotten a fairly positive response from customers at the mom and pop diner, but admits that the policy has experienced some backlash. America has long been known as “Fast Food Nation.” The not-so-complimentary term has become associated with a nation where obesity, diabetes, and processed foods-consumption run rampant. One-third of Americans are overweight or obese, so it’s no wonder that companies traditionally known as fast food brands are trying desperately to distance themselves from the term. New terms like “fast casual” or “fast crafted” are trending instead. With new slogans, a fresher look, and healthier menu options, older quick service brands like McDonald’s and Burger King are struggling to compete with newer, sleeker brands that promote healthier or more organic lifestyles like Chipotle, Panera, and Shake Shack.

And speaking of fast food, Shake Shack’s Chick’n Shack sandwich will now be available at most locations. Shake Shack made waves over the summer with the release of a fried chicken sandwich for its New York City customers. In fact, that may be an understatement: The Shack Shack Chick’n Shack sandwich was sold out in just two days. But now the tantalizing sandwich is available for everyone: Shake Shack announced the Chick’n sandwich will be added to menus nationwide, with the exclusion of the JFK and Times Square locations. The glory of the Shack’s fried chicken is now for everyone to enjoy.

About once a week I put my foot down and I tell Eric, &ldquoYOU ARE TAKING CARE OF MISS PEPPER! I AM LIVING IN THE KITCHEN TODAY.&rdquo Normally, he argues with me a little because well, he&rsquos a man. (Sorry, Babe. I know you&rsquoll be reading this probably later tonight!)

I&rsquom pretty sure he will forget that I called him out after I make something else to eat, so oh well.

Anyway- like I was saying, about once a week I dedicate a good portion of my day to the kitchen. I test out new recipes, I tweak old ones, I sing along to some Miranda. It&rsquos really a perfect day.

Every hour or so food magically appears on the dining room table and Eric walks in like, &ldquowhoa, when can I eat this?&rdquo and I normally make him wait until it is cold and after I take some photos. I&rsquom the worst!

But, he is the most honest with me when it comes to my recipes. Sometimes a little too honest. He&rsquos quite the food critic these days. (hahaha!) Before I actually post a recipe It normally goes through a chain of people. Myself, Eric, and My mom. If we all agree that it is fabulous, then I tell you all that it is fabulous. We build a lovely relationship of trust, and you continue making my recipes, and my heart is happy!

It&rsquos really a wonderful thing!

Okay, now that you know all of that. I will introduce you to one of my latest kitchen creations. Tex Mex Cheesy Chicken Spaghetti. I love me some Tex Mex! I normally don&rsquot make it because it&rsquos something I tend to get when we go out for dinner, but doing this blog now is helping me break out of my little cooking shell.

I still won&rsquot put mushrooms in anything, don&rsquot ask.
