Dessert cake with strawberry cream and white chocolate, without sugar

Countertop: Separate the eggs, mix the egg whites with a pinch of salt. When they start to foam, add the sweetener and mix well. In a bowl, mix the yolks with the oil, add them over the whites, add the whipped milk, mix. Add sifted flour, rascove powder, baking powder and vanilla, mix lightly with a spatula, in slow motion. Divide the obtained composition into two bowls, evenly. Wallpaper a 24/37 cm tray with baking paper, pour the first composition, level it. Put the countertop sheet in the hot oven, at 170 degrees, for 10-12 minutes. When it is ready, take it out of the oven and bake the second one.

Strawberry cream: When it is thawed, mix it in a blender, then pass it through a sieve to remove the seeds. Wash the strawberries well, pass them through a blender, but do not puree them at all, leave the larger pieces. Put the strawberry and blackberry puree, the powder sweetener in a saucepan and transfer to the heat. Stir until the sweetener melts, then dissolve the starch with 2-3 tablespoons of cold water and pour it over. Stir continuously until the jelly thickens. Take it off the heat, cover it with foil and let it cool. Melt the white chocolate on a steam bath. Cream for whipped cream, cold, mix it with the powder sweetener, but not at all. Add the cold fruit jelly, melted chocolate, vanilla and mix everything on low speed until the cream becomes frothy. Wallpaper with food foil the tray in which you baked the countertop sheets. Place the first sheet, put half of the cream, level it, the second sheet and the rest of the cream. Level, cover the cake and let it cool for 3-4 hours or overnight. Mix the dark chocolate with the whipped cream, put them on the steam bath and mix until the chocolate is completely melted. Remove the cake from the cold, portion it. Put a piece of strawberry on each one, then with a dui with a very thin tip, glaze them with dark chocolate. Leave them for 10-15 minutes to dry the chocolate, then it is only good to serve.
