When I was a child, it was a tradition in our area, that is, through the north of Oltenia, on the border with Muntenia, that in May, when acacias bloom, housewives prepare, more than that, donuts with acacia flowers and a very pleasant aroma spread. in the whole village, even if your love was greater, but also your great desire.
The donuts were made with whipped milk, naturally, eggs from the hens in the yard and freshly ground flour and came out very fluffy and fragrant.

  • 250 g of drinking yogurt
  • 100 g sugar
  • 3 sachets of vanilla sugar
  • 400 g of flour
  • 1 sachet of baking powder
  • a pinch of salt
  • frying oil.
  • vanilla flavored powdered sugar for decoration

RECIPE PREPARATION Dessert donuts with acacia flowers:

First we break the acacia flowers with stalks and rinse them in cold water, then we let them drain. Mix the eggs with a pinch of salt, sugar and vanilla sugar until frothy. Then add the yogurt, mix and gradually incorporate the flour mixed with baking powder. It forms a dough much thicker than that of pancakes, like donut dough with a spoon. Let the dough rest for 10-15 minutes. Put in a bowl with high walls, preferably a kettle, heat the oil. We put about 250-300 ml of oil, so that the donuts run freely. Pass each acacia flower through the dough and immerse it in the hot oil. We put 4-5 or as many acacia flower donuts to fit, so that there is room for the dough to develop. Let them fry for about 1 minute on each side, then take them out on the plate. The fire must be of medium intensity, slightly to the sea, otherwise, if it is of low intensity, the donuts will be soaked with oil, and if it is too high, they will brown too quickly and will not cook enough inside. You can even put two flowers on a donut, for a more intense aroma. Care must be taken when dipping the flowers in the dough, so that they do not break from the stalks, we help ourselves with a spoon by pressing them lightly and we also put them in the hot oil with the spoon. Let the donuts cool slightly, then powder them with sugar, preferably with vanilla flavor.
