They choose apricots healthy and less ripe, wash well with cold water, remove the seeds and place the fruit in jars close to the neck of the jar. Put 4 tablespoons of sugar in each 800 ml jar or 2 tablespoons in each 400 ml jar. Fill the jars with water, put the lids on, shake well and turn the jars with the lid down so that the sugar dissolves completely. Then in a bowl large enough to fit the jars, place a kitchen towel on the bottom and place the jars next to each other. Add water until the pot is filled three quarters and simmer the compote for 30-40 minutes. Turn off the heat, cover with a dry towel and leave the jars compote in water until cool. The next day the jars are boiled with apricot compote simmer for another 30-40 minutes, leave to cool until the next day and then keep in a cool place. The compote can be stored for almost a year.

I do not use other flavors, or combinations of other fruits, for the preserved compote, just to keep the special flavor and aroma of the fruit for the cold winter months.

Preserved apricot cake

& # 8211 4 eggs, 1 apricot compote (800 ml), 100 g dehydrated apricots, 200 g raw sugar, 50 g vanilla powdered sugar, 300 g flour, 1 sachet baking powder, 125 g margarine at room temperature, 100 ml milk, 10 g gelatin, 250 ml cream, water, salt

Finely chop the dehydrated apricots. Drain the apricots from the compote and strain. Mix the flour with the baking powder. Rub the margarine well, add the yolks, sugar and mix until the composition becomes creamy. Put the flour alternately with the milk, add the dehydrated apricots and mix well. Spread evenly in a tray lined with baking paper. Put in the preheated oven over medium heat for 20-25 minutes (toothpick test) then cool. Remove the paper and place on a platter. Soak the gelatin in 4 tablespoons of cold water for 10 minutes then dissolve it on low heat, taking care not to boil it, for about 1 minute. Cool and incorporate into the mashed apricots. Mix the whipped cream, mix with the apricots and spread over the counter. I garnished with candy colored sugar decor We put in the fridge for 2 hours. We portion and serve.

Good appetite! (if you liked it leave a comment)

Apricot compote

Apricot compote
Last year I didn't even manage to put a jar of apricots, although we really like it. The weather did not hold up with us and the apricots unfortunately froze. This year to our satisfaction the harvest was good and I did not miss to put a few, & # 8230 that is about 40 jars of Apricot compote.

I put them in the same way as my grandmother did, and my mother without a preservative by the classic method. In my opinion, this is the fastest way to put compote. You have a little work to do until you wash the fruits and remove the seeds, but it works relatively quickly.

I recommend you not to throw away the apricot kernels because you can prepare a delicious Amaretto Liqueur from them. You can find the recipe for this liqueur by clicking on it Lichior Amaretto .

Let's see how we finally proceeded with the compote.

Caise Compot Ingredient

Less ripe apricots (to be strong and not to be hit)
sugar
the water

Preparation of Apricot Compote

The apricots are washed in cold water and then drained. Remove the seeds by opening the apricots in half. We place half of the apricots in jars. Put 3 tablespoons of sugar over the apricots in each jar. We fill the jars with cold water. We close the jars with lids.

In a saucepan we put kitchen towels, place the jars and cover them with other towels. Pour cold water over the jars placed in the pan, taking care that the water does not exceed the shoulder of the jar.

The pan with the apricot jars is boiled. Boil for 15 minutes from the first boil of water (no more because the apricots soften very quickly and in the end you will have something indefinite in the jar). After 15 minutes we turn off the heat, put a lid over the jars, or a larger cardboard and cover with a blanket. Leave the apricot jars in the pan until the next day until they have cooled completely.
They are taken out of the water, wiped and placed on the shelf in the pantry waiting for the long winter days.
