This easy recipe is not only easy, it tastes amazing! It's also a healthier alternative to fast food chicken nuggets for children (and is, in my opinion, much more crunchy and delicious!). This recipe will keep everyone happy.

  • 1 tablespoon oil
  • 60g plain flour
  • salt and black pepper, to taste
  • 3 eggs
  • 750g boneless chicken breast, cut into strips
  • 175 to 250g panko breadcrumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cayenne powder

  1. Spread oil thinly and evenly over a baking tray.
  2. Add salt and pepper to flour and mix in a shallow dish.
  3. Beat eggs in another shallow dish.
  4. In another shallow dish, combine the panko with the oregano, paprika, cayenne, salt and pepper. Make sure to spread the spices out evenly over the breadcrumbs, so that nobody gets a bite that's too spicy!
  5. Now dip the chicken tenders first into the flour, then into the eggs, then into the panko breadcrumbs, making sure to get an evenly distributed coating on each tender at every step. I recommend doing this step in batches, rather than doing each tender one-by-one, because its more efficient and effective.
  6. Spread the panko-covered chicken tenders onto the baking tray that was previously greased. Bake in a medium-high heat oven until golden brown. Around half-way through the cooking process, flip the chicken tenders to the other side.

Tip

A great sauce to go with this is a honey-soya sauce mix. Just mix 2 tablespoons of honey with 4 tablespoons of light soya sauce. You can also experiment with creating your own sauces with barbecue sauce, mustard, or other sauces.
The seasoning of the panko breadcrumbs can be changed. You can make it less spicy or more spicy according to your own taste. The cayenne pepper can be omitted to avoid spiciness. The paprika adds more of a smokey flavour than a spicy flavour but can be omitted as well.

So many different side dishes accompany this chicken perfectly, too. Serve it with everything from air fryer zucchini and rice pilar to a large green dinner salad and the reception will be warm and the bellies will be full.

With just a few steps, no dredging, flour, eggs, or deep-frying, this panko breaded chicken breast is a fast-track way to enjoying a fried chicken-like dinner tonight!

Baked panko chicken recipe ingredients:

  • Chicken cutlets - or, boneless skinless chicken breasts, cut in half horizontally
  • Light mayonnaise - or reduced-fat mayo I use Best Foods Olive Oil Mayonnaise
  • Minced garlic
  • Smooth Dijon mustard
  • Panko bread crumbs - Japanese-style bread crumbs that are light and airy.
  • Olive oil - extra virgin will provide the best flavor
  • Dried thyme - the full leaves (not ground), are best

Ingredient substitutions:

  • Chicken - chicken tenders and boneless skinless chicken thighs can work in place of the chicken cutlets. If using tenders, reduce the cooking time to 15-18 minutes, or until cooked through to 165 degrees Fahrenheit.
  • Mayonnaise - traditional or full-fat mayonnaise can substitute for the reduced-fat mayo. The nutritional count of the recipe will be affected, however.
  • Mustard - whole-grain Dijon mustard can replace the smooth mustard
  • Herbs - dried poultry seasoning or rubbed sage can substitute for the dried thyme

How to make panko breaded chicken:

  1. Preheat the oven and spray a large baking sheet with non-stick cooking spray.
  2. Stir together the mayonnaise, minced garlic, salt, and Dijon mustard until combined in a small mixing bowl.
  3. In a medium mixing bowl, stir together the panko bread crumbs, salt, dried thyme, and olive oil together with a fork until the olive oil is evenly mixed into the bread crumbs.
  4. Place the chicken cutlets on the prepared baking sheet. Spread the mayonnaise mixture on the chicken until covered.
  5. Sprinkle the panko bread crumb mixture evenly over the chicken.
  6. Bake the chicken until the chicken is cooked through and the bread crumbs are golden and crispy.
  7. Serve the chicken hot with optional lemon slices to garnish.

  • Pre-heat the oven - this ensures that the oven is nice and hot. The chicken will cook the most evenly and the bread crumbs will crisp up the best in a preheated oven
  • Use a baking sheet, not a dish - the chicken needs to be spread out on a large baking or cookie sheet for it to crisp up evenly, so don't use a baking dish and don't cover the baking sheet while baking
  • Don't use regular breadcrumbs - panko bread crumbs are light and fluffy, so they crisp up beautifully for this recipe. Classic bread crumbs are heavier and don't crisp in the same way so we need to avoid them for the best results
  • Don't skim on the mayo - it adds loads of flavor as well as binds the bread crumbs to the chicken so we need to use all the mayonnaise the recipe calls for

To make this recipe ahead of time, prep the chicken, whisk together the mayonnaise mixture, and stir together all of the bread crumb mixture except for the olive oil. Cover and refrigerate the mayo and chicken (the bread crumbs are fine at room temperature) for up to 24 hours.

Right before baking spread the mayonnaise on the chicken and toss the olive oil with the breadcrumbs. Sprinkle the breadcrumbs on top of the mayonnaise and bake the chicken as directed.

Recipe variations:

  • Lemon panko chicken: substitute 1 teaspoon lemon zest for the dried thyme and serve the chicken with lemon slices
  • Italian panko chicken: substitute ¾ teaspoon dried Italian seasoning for the dried thyme and serve the chicken with warmed marinara sauce to dip

  • Refrigeration: leftovers keep covered in the refrigerator for 3-4 days.
  • Freezing: leftovers do not freeze well

Reheating directions:

Gor best results, reheat leftover panko chicken in a toaster oven over medium-low heat or an oven at 300 degrees for 4-6 minutes, or until the bread crumbs have crisped and the chicken is heated through.

You can also reheat the chicken in a microwave over medium heat in 30-45 second intervals, or until heated through, but the bread crumbs will not re-crisp this way.

Skinny Baked Crispy Chicken Tender Recipe

Ingredients:

  • 1 package chicken tenders
  • panko breadcrumbs
  • Trader Joe’s Everything But the Bagel seasoning
  • salt + pepper
  • optional: cayenne pepper (we only use this for the adult version)
  • optional: garlic powder (we add a little of this for the kids)
  • 2 eggs

Preheat oven to 425 degrees! Place parchment paper on a baking tray.

In one bowl combine 1-1.5 cups of panko bread crumbs, 2 tbsp of TJ’s EBTB seasoning, a few grinds of ground pepper and either a few dashes of cayenne pepper if you prefer heat or leave as is/add a few dashes of garlic powder for the kiddos! Set aside. In another bowl combine 2 eggs together. Set aside. Season your tenders in salt and pepper.

Create a station to coat tenders in egg wash and then coat in panko mix. Once completely coated, lay on parchment paper for baking. Once all tenders are coated, top with a little extra TJ’s EBTB seasoning! Bake for 25 minutes until super crispy! If they don’t look browned enough you can broil them for 3-5 mins too!

Serve any way you like! We put on top of an Asian-inspired salad of mixed greens, chopped peppers, cucumbers, radishes and TJ’s carrot ginger miso dressing which if you haven’t tried GO GET IT NOW. It tastes just like Benihana’s ginger dressing which if you know, you know.


Spicy Panko Crusted Chicken Strips

This is a delicious, very crunchy spicy chicken strip prepared in the oven.

Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts, Cut Into Strips
  • 1 cup Milk
  • 2 teaspoons Tabasco Sauce
  • 1 cup Plain Panko Bread Crumbs
  • ½ teaspoons Salt
  • ½ teaspoons Paprika
  • ½ teaspoons Onion Powder
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Cayenne Pepper

Preparation

1. Preheat oven to 400 degrees. Combine milk and Tabasco sauce in a bowl. The vinegar in the Tabasco sauce will make the milk into a thick buttermilk. Add chicken and let sit for at least 15 minutes.
2. Combine bread crumbs and dry seasonings in a bowl. Bread chicken. Place on a lightly greased baking sheet. Sprinkle extra crumbs on top of the chicken. Bake chicken for 30-45 minutes, or until chicken is firm, browned, and has an internal temperature of 165 degrees.

Tried this one and it’s delicious! Used boneless chicken thigh though instead of chicken breast.

I followed this recipe *almost* 100%. Instead of Tabasco, I used Cholula (what I had in the pantry) and instead of regular Panko, I used whole-wheat Panko (for some reason, my grocery store was out of regular Panko!). The tenders cooked up so well! Very crunchy, with just the right amount of spice. I served these with a horseradish dipping sauce, which was great, but would also have been great with Ranch or Blue Cheese dressing.

These were very good. Our whole family enjoyed them they are a step up from a regular chicken tender. A hint spicy with a good amount of crunch. Easy to prepare.

Great everyday recipe that is easily adapted to make it a little less spicy for little ones. This is now my “go to” recipe for chicken strips.

These were yummy! This was my first time using panko bread crumbs and it will not be my last. I ended up need a bit extra of the bread crumb mixture to fully coat all my strips. I loved the crispiness of it all.

I didn’t have any of the spicy ingredients, but this recipe sounded good anyway! I tried corricky’s trick of putting straight vinegar into the milk, but after I put my chicken in, I started worrying that I had messed it up. I ended up washing my chicken and just using a beaten egg to adhere the panko. This recipe produced a nice, crunchy chicken strip, way better than the panko chicken I’ve tried to deep-fry. Without the spiciness though, I should’ve given my chicken a little seasoning as it was a little bland. Went great with ketchup!

These turned out great! Very crunchy and flavorful. Just be sure not to overcook the chicken- I almost did.


Baked Chicken Tenders

INGREDIENTS:
1½ pounds boneless, skinless chicken breast &ndash cut in strips
¼ cup dijon mustard
2 cloves garlic, minced
2 cups panko bread crumbs
1 teaspoon salt
½ teaspoon pepper
1 tablespoon olive oil
1 tablespoon paprika

INSTRUCTIONS:

1. Line a baking sheet with aluminum foil and place a metal cooling rack flat on top of the baking sheet. Spray cooling rack with non-stick spray and set aside.

2. In a small bowl, combine mustard and garlic. Using a small brush, spread the chicken strips with the garlic mustard.

3. In a shallow pan, combine bread crumbs, salt, pepper, olive oil and paprika. Working in batches, add mustard coated chicken to the panko mixture and press to evenly coat all sides.

4. Place panko covered chicken strips on metal rack lined baking sheet.

5. Bake for 12-15 minutes or until browned, turning once halfway through.

Oven Fried Chicken Tenders with Panko

When my husband and I lived in Boston, we loved getting together with friends and family for dinner at Not Your Average Joe’s, a local restaurant chain. Baked Chicken Fingers with Panko and Dijon is my healthy version of their famous Mustard Crusted Chicken.

Pan-fried, crispy, juicy perfection in all of its mustard glory- I can’t even begin to estimate the calorie count. Fortunately, we were fat, happy and in love so it didn’t matter.

Lighty, fluffy and airy – panko is my go-to ingredient whenever I need a crispy, crunchy crust without gallons of oil. Dijon mustard adds flavor, spice, and tang with minimal added calories. Bake at a high temperature on an elevated cooling rack and you are well on your way to a skinny-jean friendly chicken fingers dinner.
