Salad with squid rings and tomato vinaigrette

Place the squid rings in a bowl, and place the crushed garlic and finely chopped parsley on top. Add the wine and olive oil, salt and pepper, cover and leave to marinate in the refrigerator for 2 hours.

Wash the salad, break it into pieces and place it in a large bowl.

Let's prepare the vinaigrette: wash the tomatoes and cut them in half, remove the seeds and stalks, then cut them into small cubes. Thyme strands are washed, wilted, the leaves are broken and cut into small pieces. In a bowl put the tomatoes, chopped thyme, olive oil, vinegar, wine and lime juice. Season with salt and pepper to taste. Then mix to combine the flavors.

Squid fry on the grill or in a Teflon pan for about 3 minutes.

Add the tomato vinaigrette over the salad and place the hot squid on top. The salad is served immediately. It goes great with toast.
