Chicken stew

The chicken (or chicken breast as you prefer, if it is chicken breast are certain steps that you will not do) if it is a whole chicken, wash and go through the flame (flambe) cut (portion) and will give with a pinch of salt.

Peel the onion and cut it into browns, wash the carrots, clean them and cut them just like the onion. We will cut the garlic into thin strips, and we will wash the potatoes, clean them and cut them into cubes of the right size and we will boil them in salted water.

Sift the flour, clean the parsley, wash and finely chop. Tomato paste will be diluted in water or soup.

Put a pan in which we add oil, in this we add the pieces of meat, let them sauté and take on color on all sides. Then add the onion and carrots, add 150 ml of soup and let it boil.

We will remove the meat and we will put it separately, continuing to boil and over the onion and carrots we will add sifted flour dissolved in cold water and tomato paste and we will salt and pepper and we add the rest of the soup leaving it to boil well and decrease, about 25-30 minutes.

When this sauce is ready, take it off the heat and let it cool a bit, you can strain the sauce or we can blend it, I chose the second option. We added the resulting sauce over the chicken pieces, we added the garlic and we continued cooking for 15-20 minutes, near the end we added the wine and the greens.

This dish will be served with natural potatoes, which have been boiled and sprinkled with greens.
