Wash the strawberries under running water and put them in a strainer to drain the water. We don't let them sit in the water. We then clean the tails and put them whole in a pot with a double bottom, or we can use a hob to put under the pot.
Put the pot on low heat and stir, quite rarely, being careful not to crush the fruit. It should not be mixed too often, for this very reason. Strawberries will leave a lot of juice. Add the foam formed on top and let it boil until it decreases by half.
At that moment add the sugar. The recipe says ~ 400 g per kg of strawberries. I put 2 kg of sugar in full and it was enough. But that depends on everyone's taste and how ripe the fruit is. I hit some very sweet strawberries, but not very big :).
After adding the sugar we will have to mix more often because it will stick to the pot. We take out with a spoon a few drops on a plate, to test the consistency. When it has reached the desired consistency, add the lemon juice and turn off the heat.
Put the jam in washed and sterilized jars and put the lids. Place them on the lid and then cover them until they cool.
We store them in a cool place and it remains to be seen if they catch them in winter :)))).
I had 9 jars and a portion that I ate then. Someone had to sacrifice and taste the jam: D :))))).
