Chicken with zucchini, broccoli and beschamel sauce

The chicken is cleaned of fat and skin, washed, placed in the steamer bowl, sprinkled with olive oil and seasoned to taste with various dried herbs.

Wash the zucchini, cut the tails and cut lengthwise into thicker sticks. The broccoli bunches are washed, then placed with the zucchini in the bowl above the steamer. Season with salt and a little white pepper. Set to 40 minutes, and remove the vegetable bowl after 15 minutes.

Serve with beschamel sauce.


Food of broccoli, chicken and cornflakes

This combination seems strange but I will tell you that it is a successful one, for children especially it is a dream. I chose to prepare this recipe because I didn't know how to integrate broccoli in Adrian's daily menu and even harder, how to make his father eat it :). The food of broccoli, chicken and cornflakes is a successful creamy and at the same time crunchy combination that can be served both at noon and at dinner.

  • 250g rice (a cup)
  • 400g chicken breast
  • 1 broccoli
  • 200 g cornflakes
  • 300ml milk
  • 1 tablespoon flour
  • 100g flowing cheese (cheese type)
  • 50g butter
  • salt, pepper, oil

1. Boil the rice in salted water then strain it and let it cool.

2. Cut the chicken into cubes and season it with salt and pepper and then fry it in a little oil for a few minutes until done.

3. Prepare a beschamel sauce from 300 ml of milk. Heat a little oil in a saucepan, add the flour, mix a little and then gradually add the milk, stirring constantly with a whisk so that it does not become lumpy. Stir until thickened, add salt (it would not spoil a nutmeg powder) and then add the grated cheese. Stir over low heat.

4. Unwrap the broccoli and boil it in salted water for 3 minutes.

5. In a round or rectangular tray (no matter the shape, it is important to be deep) put a little oil and then the rice. Put the chicken and broccoli pieces over the rice, then pour the cheese sauce and sprinkle cornflakes on top. Be generous and put as many :). Put the chopped butter over the flakes and bake for about 20 minutes at 180 degrees.

Serve hot. It's delicious !

Chicken meatballs with broccoli and white sauce

An easy food to cook if you have meatballs ready. Yes, meatballs are good, but when you don't want to serve them as an appetizer, you have to make a sauce. And because we know the "red" version from the marinated meatballs, we tried the "white" version. With broccoli, that's what I had in the fridge :).

  • 500g chicken (can also be pork)
  • 2 eggs
  • 1/2 small onion
  • 2 cloves of garlic
  • 2 tablespoons breadcrumbs
  • salt pepper
  • 3 cloves of garlic
  • 50g butter
  • 2 teaspoons flour
  • 200ml milk
  • salt, nutmeg

We need 1 more piece of broccoli (500g)

1. We start with the meatballs, mix all the ingredients and form the smaller meatballs that we fry in oil. You can also bake them in the oven on a healthy baking sheet.

2. Unwrap the broccoli, wash it well and boil it for 3 minutes in water with a little salt.

3. Mix the flour with the milk. Melt the butter in a pan then add the chopped garlic. We leave it for a while then take it out and throw it away. Add (over low heat) the milk composition with flour (you can replace the milk with sour cream) and always mix until it thickens then add the meatballs. I didn't put all the meatballs, about 3/4 of the amount. We add another 100ml of milk, a little nutmeg salt and let it boil for a few minutes. Add broccoli and leave for another minute.

Cauliflower with broccoli and cheese

Melt the butter, then add the thinly sliced ​​garlic. When the butter has melted, add the flour, stirring constantly. Add the milk, mixing well the composition. Season with salt and pepper.

Leave on low heat, stirring constantly, until it thickens like a sauce.

Add the grated Cheddar cheese, stir until incorporated into the sauce, leave for a while and then remove from the heat.

Unwrap the cauliflower and broccoli in the bunches and place them in a bowl greased with butter and then pour the prepared sauce earlier.

Sprinkle with grated Parmesan cheese and then put in the oven at 180 & degC for about 45 minutes or until nicely browned on top.
