How to make meatloaf with artichokes

Clean the artichokes, removing the hardest outer leaves, part of the stem and cut off the tips.
Cut the artichoke hearts into wedges, remove any beard and place them in a bowl with the water and the juice of half a lemon for a few minutes.


Brown a clove of garlic in a pan, then add the artichokes to the pan and sauté them over high heat


Lower the heat, add salt, pepper and chopped parsley, add a ladle of hot broth and cook for about ten minutes, covering with a lid


In a bowl put the minced meat with the eggs, the previously softened bread in a bowl with the water, the grated Parmesan cheese, the salt and the pepper.


Knead with your hands until you get a homogeneous mixture

Arrange the parchment paper on a surface, and spread the obtained meat mixture on top, flatten to form a rectangle

Now lay the slices of cooked ham, the sautéed artichokes and the slices of mozzarella in layers.

With the help of parchment paper, wrap the meatloaf on itself.

Close the edges and with the help of your hands seal everything well.

Brush the meatloaf with beaten egg and cover with a few curls of butter
Put the meatloaf with artichokes in an ovenproof dish and bake in a preheated oven at 180 ° and cook for about 40 minutes

Remove from the oven and wait a few minutes before cutting into slices and serving

Ingrediants:
6 violet artichokes,
200 gr of minced veal meat,
200 gr of minced veal,
120 gr of sliced ​​speck (about 16 slices),
100 gr of mortadella,
40 gr of fresh bread crumbs (I used 3 slices of chopped bread in the Thermomix),
1 egg,
500 ml of milk,
100 gr of white scamorza cheese,

Update: I used canned artichoke hearts and it came out great, it's even faster to do it you don't have to wait for the artichokes to cook! Better no?

Today's recipe is inspired by the February issue of Sale e pepe.
In general, I'm not a big fan of meatloafs. but of the artichokes yes! And whatever the artichoke touches turns gold!
We just devoured it.
I also find it suitable for both Easter lunch (strictly accompanied by artichokes!), And for the Easter Monday outing. In fact, it remains very compact and is therefore easily transportable.

Meatloaf With Artichokes

Ingrediants
4 artichokes
400 g of minced veal
100 g of speck
1 Mantuan salami (about 100g)
1 egg
40 g of breadcrumbs
50 g of milk
1 lemon
Parsley
Extra virgin olive oil
Salt and pepper

Method
Clean the artichokes, cut them into wedges and leave them for a few minutes in water acidulated with lemon.
Heat a pan with a little oil and cook the artichokes for about 20 minutes, with the help of a glass of water. Season with salt and add the chopped parsley.
In the mixer, chop together the breadcrumbs dipped in milk, the minced meat, the salami, the egg, a third of the artichokes and a pinch of salt and pepper. Then line a loaf pan (22x8cm) with parchment paper, then with the slices of speck slightly overlapped and let fall towards the outside so that you can then close them again. Fill the mold with a third of the meat mixture, then cover with the artichokes and finish with the remaining meat.


Fold the slices of speck over the meatloaf and cook in a preheated oven at 180 & # 176 for about 45 minutes.
