Notes

I have used fat free Mayonnaise and dill relish sweetened with Splenda for a low cal verison.

Ingredients

  • 2 Chicken Breast
  • 1/4 Cup sweet relish
  • 1/2 Cup Mayonnaise (I use Dukes)
  • 1/2 Cup chopped onion
  • 1 celery stalk (chopped)
  • 1 Teaspoon vinegar (white or cider)
  • salt, pepper , garlic salt to taste

Directions

Cut chicken into pieces place in microwaveable bowl.. Cover chicken with water, I usually season with salt and pepper at this time. Cover bowl with plastic wrap. Put in microwave nd cook on high for 20 to 25 mins. Drain, shred chicken, add other ingredients and mix well. Chill... and eat....

This is a simple yet great tasting chicken salad recipe that serves 6 to 8 people. You can serve this chicken dish on a bed of fresh lettuce, eat it between two slices of bread, or eat it with saltine crackers, your choice.

This basic chicken salad is simple, yet still great tasting.

What I like best about this basic salad recipe is that you can be creative.

You can easily make this out to be something quite special with the addition of some simple ingredients.

For instance you can add a variety of fruits and nuts (i.e. apples, pineapple, raisins, almond, walnuts, etc) to make the chicken salad more appealing to your taste buds. The choice is yours to make.

After you make a decision on the chicken you want to use, then decide on whether you want big chunks or if you want it shredded into very small pieces. It is a personal choice like everything else in this recipe. It is easy to separate the chicken either way without using a shredder.

Almost all cooks use mayonnaise to hold the ingredients together. They also agree it doesn't matter which brand you use. However, most of them use the same brand they use for other dishes. If you want to cut calories for a healthier salad, you could use yogurt instead of mayo.
