Chia pudding with turmeric and lemon

What could be better on a summer morning than this vegan chia pudding with turmeric and lemon? It is full of vegetable proteins and healthy fats. It's like a sun in a jar!

If you haven't noticed, I'm very obsessed with chia pudding. What's wrong with her? It is healthy, tasty, quick to prepare and serve when you are on the run.

Not to mention, the combinations are endless, from chocolate or vanilla to matcha, spirulina, served with nuts, fruits and other superfoods.

This chia pudding with lemon is one of my favorite combinations. It is refreshing and served with turmeric gives it an interesting aroma. If you haven't heard, turmeric is very healthy.

In addition to its anti-inflammatory properties, curcumin (the main active ingredient in turmeric) is a powerful antioxidant. It also helps activate the body's antioxidant enzymes.

You can make any kind of vegetable milk you want for the base of this chia pudding. I used almond milk, but also cashew, soy, coconut or oat milk.

When it comes to toppings, I love the combination of lemon and blueberries or fresh raspberries. But you can also enjoy pudding with bananas, strawberries, peaches, etc. Personally, I like to eat it with granola for a crunchy addition.

We used for the countertop the Slow Cooker dish which has a diameter of about 18 cm, but you can use a round tray with a diameter of 20 cm on which we put baking paper.
I fried the walnut in the oven for a while and then ground it.

In a bowl, break the eggs together with the sugar and rum essence and beat them until the sugar is no longer felt.
Add walnuts, chocolate flakes, flour, baking powder and baking soda and mix well.
Pour the composition into the baking dish.
I put it in the Slow Cooker and baked it for 2 hours at low temperature, turning the pot from time to time and wiping the lid a few more times.
If it is baking in the oven then preheat the oven to 180 degrees and bake the top for 20 minutes or until it passes the toothpick test.
Let the countertop cool.

We mix the yolks with the sugar, the seeds from the vanilla pod (I also put the pod and when the cream was boiled I removed it) and the starch, pouring the milk lightly. Stir continuously so that no lumps form. Grate the peel of an organic lemon.
Put the bowl on low heat and mix until you get a cream like a pudding.
Leave to cool covered with a food foil so that no crust forms.

Beat the whipped cream very well separately.
When the cream is cold, squeeze the lemon and mix well. Incorporate the cream into the cream and put a little in the fridge. Taste the cream to see if it needs more sour, and you can add a little more lemon.

Cut the top in half and fill it with ¾ of cream.

Place the remaining half of the top and spread the remaining cream on the entire surface of the cake. Decorate with fruit, mint, chocolate or anything else you want.

P.S After removing the seeds from the seeds, we can put it in a jar with powdered sugar to obtain vanilla sugar or in a bottle with alcohol to obtain the vanilla essence.


How to prepare tart dough with caramelized lemon

Start with the dough. Put flour, butter, powdered sugar, lemon peel and salt in a blender / mixer and beat for 10 seconds until a sandy, dry mass is obtained. Insert the 2 yolks one by one, pulsing after each one. Do not mix too much because it heats up. If it seems too dry and cannot be squeezed into a ball, you can put a little cold water (one teaspoon at a time).

At the end, take it out of the bowl and form a ball that is wrapped and left to cool.

Make a syrup from the 100g caster sugar and a little water and place the slices from the 2 lemons for topping in it. Boil everything over low heat until it decreases and the lemons have a caramelized appearance.

It should not be exaggerated because the risk is to become hard when they cool and can no longer be removed from the syrup.

Preheat the oven to 200C. Remove the wrapped tart dough from the refrigerator and spread a round or square sheet, depending on the shape in which it is baked. You must leave at least 2 cm more for the border. Place the dough in the pan and prick it with a fork, so that it does not deform when baking, then put it in the hot oven for 10-12 minutes. If you want, you can cover the surface of the dough with a baking paper cut exactly to the size over which beans are placed or special ceramic balls (which have the role of weight and prevent the formation of blisters).

After 12 minutes, remove the tray with the pre-baked dough from the oven.

In a bowl, mix cream, eggs, vanilla, peel and lemon juice and powdered sugar.
