Smoked Turkey, Blue Cheese, and Red Onion Sandwiches

Ingredients

  • 1 1/2 tablespoons olive oil
  • 2 8- to 10-ounce red onions, cut into 1/3-inch-thick rounds
  • 3 1/2 tablespoons red wine vinegar
  • 6 cups trimmed large arugula leaves (about 4 ounces), divided
  • 8 1/3-inch-thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
  • 12 ounces thinly sliced smoked turkey
  • 3/4 cup coarsely crumbled blue cheese (such as Maytag; about 3 ounces)

Recipe Preparation

  • Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.

  • Chop enough arugula to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 1 1/2 tablespoons arugula mayonnaise over each cut side of bread. Divide turkey slices among 4 bread slices. Top with crumbled blue cheese, dividing equally. Top with red onions, then whole arugula leaves and bread.

Easy Finger Sandwiches

These easy finger sandwiches are light and a cinch to prepare. Finger sandwiches are the most requested party food. The possible combinations of fillings and breads are endless. Perfect on a brunch menu, baby shower menu, bridal shower brunch or birthday party buffet.

Turkey, Veggie and Chive Finger Sandwiches
Makes 12 finger sandwiches.  Recipe multiplies easily

8 oz. pkg. plain cream cheese, softened
2 tablespoons chopped fresh chives
8 slices sourdough sandwich bread
4 Romaine or butter lettuce leaves
8 slices cooked turkey slices
1 tomato, sliced
1 small green pepper, cut into thin slices
4 slices Swiss cheese

Combine cream cheese and chives.  Spread thinly on both sides of bread.  On one slice layer lettuce leaf, ਂ slices turkey, tomato, green pepper and 1 slice cheese.  Top with  second slice and cut sandwich into 3 finger sandwiches.  Keep cool until service. 


Monte Cristo Sandwiches
Makes 6 whole sandwiches or 24 finger sandwiches

1/4 cup butter softened or 1/4 cup mayo
2 teaspoon prepared mustard
12 slices white bread French or Italian, thick slices, slightly stale is preferable
6 slices Swiss cheese
6 slices cooked ham and/or 6 slices cooked turkey breast
Butter for frying

In a small bowl beat together the butter [or mayo] and mustard until well਋lended. Spread on one side of each slice of bread. For each sandwich, top the non-buttered side of bread with a slice of cheese, a slice of ham and/or turkey. Place the second slice of bread, butter side facing up.

Brown both sides of the sandwich on a lightly buttered frying pan or griddle until golden brown. Slice each sandwich in half and serve hot.

Roast Beef and Horseradish Finger Sandwiches
Makes 18 finger sandwiches

8 oz pkg soft cream cheese
1/4 cup light sour cream
2 tablespoons prepared horseradish
12 slices rye bread
6 large lettuce leafs
18 deli roast beef slices
6 thin slices red onion

Combine cream cheese, sour cream, and horseradish and mix until well blended. For each sandwich, spread both sides of bread slices with the cream cheese mixture. Add the lettuce, meat  and onions.  Top with other bread slice and cut into 3 finger sandwiches. 


Grilled Sweet Onion and Arugula Sandwiches
Makes 20 finger sandwiches or 10 large sandwiches on hard rolls

1/2 cup olive oil
1/2 teaspoon Kosher salt plus more for sprinkling
1/2 teaspoon freshly ground black pepper plus more for sprinkling
3 large sprigs fresh rosemary
3 large sprigs fresh thyme
3 large Vidalia onions, peeled and sliced 1/2 inch thick

1/2 cup mayonnaise
20 medium slices firm textured wheat bread or !0 whole grain or Kaiser rolls or buns
5 ounces arugula leaves, washed and dried

Prepare a grill or turn on the broiler. In a small bowl mix together the oil, salt and pepper and herb sprigs. Place onion slices in a glass baking dish or large Ziploc bag. Evenly pour the marinade over them. Cover baking dish with plastic wrap or seal bag. Allow to marinate for no more then one hour.

Grill the onion slices for 6-8 minutes or cook under the broiler turning once, until they are just tender and slightly charred. Assemble sandwiches by spreading mayonnaise on both sides of the bread slices or rolls.

On the bottom of each piece of bread, layer arugula leaves and a slice or two of onion. Sprinkle with salt and pepper and top with remaining bread slices. Cut each sandwich in half or serve whole if using hard rolls. 



Egg and Watercress Sandwiches

For 30 finger sandwiches use:

4 medium eggs,boiled, cooled, shelled and finely chopped
1 cup watercress finely chopped
4 tablespoons mayonnaise
Salt and black pepper
3 tablespoons butter, softened
10 medium slices white bread

Combine finely chopped eggs, watercress, and mayonnaise. Add salt and pepper to taste. Spread butter, then egg mixture evenly over 5 bread slices. Top with remaining bread slices. Using a serrated knife, cut off crusts. Cut each sandwich in half, the then cut each half into 3 even fingers. Serve chilled



Cucumber and Parsley Tea Sandwiches

Makes 30 finger sandwiches

1/2 cucumber, peeled and thinly sliced
1/2 teaspoon salt
6 tablespoons butter, softened
10 medium slices white bread
White pepper to taste
2 tablespoons finely chopped parsley or chervil

Place cucumber slices in a colander. Sprinkle with salt and cover and let stand for 1 hour. This removes excess moisture from the cucumbers. Pat cucumber dry with paper towels.

Spread all the bread slices evenly with the butter. Top 5 bread slices with the cucumber. Sprinkle with white pepper and parsley. Top with remaining bread slices. Using a serrated knife, cut off crusts. Cut each sandwich in half, then cut each half into 3 even fingers. Serve chilled



Old-Fashioned Egg Salad

Makes 36 finger sandwiches

1/4 cup Mayonnaise
2 teaspoons Lemon juice
2 teaspoon minced shallots
1/4 teaspoon Salt
1/4 teaspoon Pepper
6 Hard-cooked eggs, chopped
1/2 cup Finely chopped celery
12 medium slices white bread

In a bowl, combine mayonnaise, lemon juice, shallots, salt and pepper. Stir in eggs and celery. Cover and chill. Spread egg mixture evenly over 6 bread slices. Top with remaining bread slices. Using a serrated knife, cut off crusts. Cut each sandwich in half, then cut each half into 3 even fingers. Serve chilled


Dilled Chicken Salad Pitas
Makes 8-10 mini sandwiches

3/4 cup mayonnaise
1/4 cup Dijon-style mustard
1 teaspoon dried dill weed
1/4 teaspoon pepper
2 1/2 cups diced cooked chicken or 2 (10 oz) cans premium chunk chicken
3 green onions, sliced (1/4 cup)
Lettuce leaves
8-10 mini whole wheat Pita rounds

In medium bowl combine mayonnaise, mustard, dill weed and pepper. Stir in chicken and green onions. Line each pita round with a lettuce leaf. Stuff chicken salad into mini pitas.

It is lovely to serve an elegant turkey for Thanksgiving, but if you’re looking for a bird to pair with your beer and the football game, this is the recipe. First dry-brine the turkey with salt and celery seeds overnight in the refrigerator (make sure to completely thaw the turkey before that). Then as the bird roasts, baste it with a buttery hot-sauce glaze for a rich, dark color. When you’re ready to serve, stir together an easy warm blue cheese sauce and another buttery hot sauce for dousing the turkey meat. Make sure to save any leftover sauces and meat for Buffalo turkey sandwiches the next day.

Special equipment: You’ll need a pastry brush or barbecue basting brush and kitchen twine for this recipe.

Game plan: Plan for at least 4 to 5 days of thawing time in the refrigerator for a frozen turkey, and remember that the dry brining takes at least 12 to 16 hours.

Grilled Smoked Turkey Burger with Onions, Blue Cheese and a Portabella Mushroom

For the past few years I have been developing what I believe to be a nice balance of seasonings for ground turkey to make a flavorful burger. Whereas a ground beef burger requires little in way of seasoning except salt and black pepper to bring out the natural flavors of the meat and melted fat, ground turkey meat is bland in flavor and leaner then most ground beef options.

Originally, I used to make these turkey burgers, serving them on toasted English muffins with melted cheese and topped with my favorite fixings. Then one evening a few months back when I was experimenting with Portabella Mushrooms, I thought why not combine a Portabella Mushroom and Broiled Blue Cheese with a grilled turkey burger and then top the burger with sauteed onions? To my surprise is was a very flavorful experiment that even now makes my mouth water with anticipation to the next time I make this dish.

The recipe below is for the grilled smoked turkey burgers. It is recommended to try it with the Portabella Mushroom and Broiled Blue Cheese, but enjoying the burger by itself, on a burger bun or an English muffin is just as good.

  • 1 1/2 LBS of Ground Turkey (your preference on the lean to fat ratio)
  • 1/2 TBSP of Minced (Dried) Onion
  • 1/2 TSP of Kosher Salt or Table Salt
  • 1/2 TSP of Black Pepper (I prefer to use fresh ground Black Pepper)
  • 1 TBSP of Worcestershire Sauce
  • 1/2 TBSP of Liquid Smoke (this is the secret ingredient that brings it all together)
  1. At least an hour before cooking, thoroughly mix all of the ingredients
  2. Chill the mixture in the refrigerator for an hour or more. You can prepare the ingredients in the morning and then cook the burgers in the evening for dinner.
  3. Depending on the size of the hamburger bun, muffin or mushroom, form your patties to be just a little larger for they will shrink during cooking. For large Portabella Mushrooms, one and a half pounds of ground turkey will make four turkey patties.
  4. Cook in a skillet or on the grill for 10 – 12 minutes on Medium High. You will want to flip them regularly.

Directions if preparing these turkey burgers to be used with Portabella Mushroom and Broiled Blue Cheese.

IMPORTANT NOTE ABOUT POINTS:

Note: With the exception of the Vietnamese Bahn Mi burgers. NONE OF THESE RECIPES contain the points for buns or bread. The reason for that is, I want to encourage you to use whatever low point bun, bread or wrap that you want. Use any bread that you want for your burger. and then simply add MY points onto your bread. My burger recipes are for the "FILLING" of your burger, what's between the buns. Using my Mushroom and Swiss burgers as an example: The 1st burger, on the Blue plan, is 3 points. That does NOT include your bun. So, if you choose to use a 3 point bun from your grocery store, add MY 3 points to the 3 points of your bun, and boom. 6 point burger. If you want to use a 6 point, high calorie, store bought Pretzel bun. then add my 3 points onto that pretzel bun and BOOM. 9 point burger. This way, you can easily figure the points for my burgers to whatever bread you feel like using.

Salmon and Cream Cheese Tea Sandwiches

Cream cheese and smoked salmon has traditionally been a favorite topping for bagels, but this combination can also make a wonderful filling for finger sandwiches. This recipe is a quick and easy addition to any afternoon tea party or light lunch and makes enough sandwiches for a crowd, when served with other offerings.

These finger sandwiches use buttermilk white bread, but if you want to go a more traditional route, consider using pumpernickel you can also substitute whole wheat or even your favorite gluten-free bread. Dill has always been a complementary herb to salmon so feel free to swap it in for the parsley, and if you would like, use fresh herbs instead of dried. An alternative, attractive way to serve these sandwiches is open-faced, which also cuts down on the bread.

Salmon is a good source of omega-3 fatty acids, which have several health benefits, and these little sandwiches can be a fun way of including the healthy fish in your diet. However, be aware that cold-smoked salmon is high in sodium.


Sriracha Turkey Sandwiches with Pickled Veggies

If you had told me back in 2008 (or whenever I first bought a bottle of sriracha, I can’t remember), that I would still be eating it (and eating a lot of it) in 2017, I might not have believed you. At the time it first started to gain popularity in the U.S., it certainly seemed, at least to me, like something that would be passing fad.

But as the years have gone on, sriracha has changed from something trendy to something rather ubiqitious. Just like I expect most casual restaurants to stock ketchup and mustard, I assume sriracha is close at hand these days, too. It’s spicy, tangy-sweet flavor with a punch of garlic is the perfect companion to eggs, burgers, sandwiches, and just about everything else.

So, while this sandwich isn’t exactly on-trend at this point, I can assure you that it’s super tasty. And to me, a well-crafted turkey sandwich is something that is never going to go out of style. I dig a great turkey sandwich, year ’round, for any meal of the day.

To make these Sriracha Turkey Sandwiches with Pickled Veggies, you’ll want to start by getting your pickle game on. Honestly, you can pickle just about any vegetable that you have around (or looks good at the market). I prefer ones that can be thinly sliced and lay relatively flat, so I can get a sturdy sandwich build. This time around, I went with red onion, radishes, cucumber and carrots. The veggies need just a few hours to turn into pickles, and then you can keep them in the fridge for up to a week, for easy advance meal prep.

After your pickles are ready, grab some sort of bread or roll and slather it with sriracha mayo. You can buy pre-made sriracha mayo in the condiment aisle of some stores, or you can just make it yourself by stirring together the two ingredients.
