Cake with coconut milk and Raffaello candy

Melt the butter. Meanwhile, we grind the biscuits on the robot. Add the melted butter over the biscuits and form a paste on which we spread evenly in a baking dish (preferably with a detachable ring). Place the candies in a circle and press them a little into the cookie dough. Shape the refrigerator.

Melt the white chocolate on a bain marie and after it has melted, set it aside.

We hydrate the gelatin in water and leave it for about 10 minutes.

Coconut milk is boiled with sugar and after boiling, add the liqueur. Remove from the heat and then add the gelatin and mix well, well.

Mascarpone cream is mixed with cream cheese and white chocolate. Then, lightly pour the coconut milk composition over the cream and mix until smooth.

Remove the baking tin from the fridge and lightly pour the cream mixture over the biscuits.

Careful! It is possible that the candies will rise in the composition, do not be afraid, you can easily press them back.

Refrigerate for a few hours and then sprinkle coconut or ground almonds on top and pour a topping of melted dark chocolate.

With a knife soaked in water, cut around the shape and remove the ring. A very beautiful cake will appear.

  4. The composition obtained is mixed with the dough obtained from melted butter and condensed milk.
  5. Add a little, little by little, most of the coconut flakes (about 200 g of coconut), stirring until you get a hard texture.
  6. Put the dough in the fridge for about half an hour. (We are waiting to get a stronger texture, as seen in the video & # 8211 inserted below in the article.)
  7. The play part begins, so to speak. Patiently, we form the candies, small balls, in the middle, putting an almond.
  8. We roll the Raffaello candies in the rest of the remaining coconut, and leave them in the fridge until serving.

Put the egg whites in a bowl with a pinch of salt and beat them until they leave fluffy waves like fresh snow, add all the sugar and continue beating until it melts.

Add the jam to the beaten egg whites and beat until incorporated.

Put a piece of countertop on a plate, add a third of the total amount of cream, stick half of the raspberries well in the cream, and a piece of countertop, a third of the cream, the rest of the raspberries, the last countertop and with the remaining cream finish the whole cake on all sides.

The perfect cream for Raffaello cake!

For this Raffaello cake with coconut I wanted an airy cream, tasty, in a thick enough layer. I wanted the coconut flavor to feel as good as possible, so I added canned coconut milk and coconut flakes. You can also add some coconut essence if you have it at hand. To make it airy, I used unsweetened natural whipped cream from LaDorna. It beats nicely, is made from cow's milk cream and is very tasty. It beats very cold and at high speed and is perfect for any dessert. Also for taste, I added sweetened condensed milk. In my opinion, it gives the specific taste of Raffaello and you no longer need to use sugar.

Because I used gelatin, Raffaello's cake has to stay in the fridge overnight. As a decoration, but also for a crunchy texture, I used wafer sheets that I sprinkled abundantly over the fluffy cream. I don't think I need to tell you how good and tasty this cake is. It has a wonderful coconut taste, the texture is perfect, it is sweet enough and you will not be able to stop eating. I served the cake with a raffaello candy, but you can just add a word of whipped cream or just coconut flakes. An extraordinary, delicious, fragrant cake that you must try for the holidays, along with the Bohemian cake.

Having a family holiday, the other day I did a wrong Raphael. Because we are on the verge of winter, I wanted a different cake, one that would be seasonal, meaning white as snow. That's why I gave up making dark chocolate cake, which is my favorite, and I chose white chocolate and coconut as basic ingredients.

The coconut makes you think of snowflakes and delicious mascarpone cream with white chocolate, which I also used for the rose cake, made for my son's birthday & # 8211 see here the recipe & # 8211 makes you think of a generous layer of snow.

And obviously, overall, when you say white chocolate and coconut, you think of the famous Raffaello candies, hence the name of the cake. Candies that I made at home, some time ago, not from powdered milk but from mascarpone & # 8211 see the recipe here. It's just that this time I also used white chocolate in the composition.

For the countertop I decided to capitalize on some egg whites stored in the freezer. I had gathered (and had been sitting for some time) about 8 egg whites, that is 250 grams and I said that I only catch well to make a cake top in which to put coconut. Said and done. Once I had the plan in mind, all I had to do was get to work.

To have a wrong Raphael successful, it is best to organize in advance. It doesn't take long to make it, but rather to wait for the countertop to cool and the cream to harden.

That's why it would be good to make the top and the cream the night before and the next day to assemble the cake. I made the mistake of not doing it this way and I didn't manage to finish it as I would have liked. The cream did not harden enough and the small ornaments made with posh did not look as they should have.

Mascarpone cream with white chocolate it is a simple cream, tasty and easy to make but it takes a little longer until it cools and hardens enough to work with it. If it is too hot, it flows and does not sit nicely.

For an extra flavor, I chose to syrup the top with a syrup in which I put a little coconut milk. If you don't have coconut milk it's no problem. You can replace it with normal milk or even exclude it. Eventually you can use a teaspoon of coconut essence if you find it.


Homemade Raffaello candy

  • 100 gr unsalted butter
  • 150 gr sugar

  • 200 gr coconut

Mix all the ingredients (the butter must be at room temperature) and then let the composition cool for 1 hour.

We form balls that we pass through coconut flakes and then we place them on a plate. (Do not wet your hand because it forms easily, the fat softens from the palm temperature and can be easily shaped).

Not many ingredients, quite affordable, with a very simple preparation, which requires neither oven nor effort.

Everything is prepared cold.

  • a pack of biscuits & # 8211 you will not use them all
  • a box of sweet condensed milk & # 8211 397 g (it is similar to honey in consistency, thick, sweet and armed)
  • 300 ml unsweetened whipped cream
  • 50 g coconuts
  • 10 g gelatin
  • 60 ml milk

For decoration

  • milk
  • 250 ml fresh
  • 2 tablespoons and 1/2 sugar
  • a whipping cream envelope
  • flat coconuts
  • optional & # 8211 candy Raffaello

Preparation Raffaello cake without baking

Put the gelatin hydrated in 50 ml of cold water for 10 minutes.

Meanwhile, put the condensed milk and cream in a bowl and mix for 2-3 minutes & # 8211 the mixture will thicken very little, but don't worry.

Heat the 50 ml of milk well, then turn off the heat and put hydrated gelatin.

Stir until diluted, then cool the mixture to room temperature.

Add it thinly in the condensed milk cream, mixing gently.

Then add the coconut (50g) to the bowl, mixing with a spatula.

Let the bowl cool for 5 minutes & # 8211 the cream should be slightly reddened, if necessary leave it a little longer & # 8211 I left it for 5 minutes.

Prepare a 14 & # 21524 cm cake tray and line it with cling film.

The assembly of the Raffaello cake begins.

Place a layer of biscuits soaked in warm milk on the bottom of the tray (I don't put sugar in the milk, the biscuits look pretty sweet to me)

Then spread half of the coconut cream evenly.

Place another layer of syrupy biscuits, then the remaining cream and the last layer of biscuits.

Wrap the cake in cling film and refrigerate for a few hours or overnight.

Then turn it over with a firm motion on a plate and remove the foil.

Mix the whipped cream with the sugar for 2 minutes, then add the hardener and mix until the whipped cream becomes firm.

Wrap the cake in whipped cream, sprinkle with grated coconut and sprinkle a few hazelnuts with whipped cream on top of the cake.
