Bean stew with baked pepper salad

Wash the beans in cold water and boil them until they boil a few times. We change the water, taking care that it is hot, so as not to stop the boiling process of the beans.

Meanwhile, prepare the baked pepper salad.

In another bowl, add a little oil and finely chopped vegetables. Temper them until they become translucent, add the tomato juice / broth and leave them on the fire for a few more minutes. Eggplant salad and baked peppers

ingredient:
1 bag of eggplant from the freezer (from those from the mother, or put with their own hands)
1/2 bag of baked peppers , also from the freezer, put in the same way as the eggplants above (capia or donuts would be ideal, because they look more beautiful in the picture, but it also works with yellow peppers, the taste is the same)
5-6 cloves of garlic (to be put gradually, according to taste)
2-4 tablespoons olive oil
salt (gradually, also to taste)

lazy loved ones, I didn't give quantities in grams for the simple reason that I don't know anyone who weighs the bags of eggplant and baked peppers put in the freezer. so rely on proportions. of course you can reduce or increase the amount of pepper, as it tunes and drives you crazy at the time of manufacture.

manufacturing process:

I suggest you an olive paste first.

500 g pitted olives
a small head of garlic
lemon juice
a tablespoon of oil

Put the olives and garlic through the food processor, add the lemon juice and oil, mix and you're done! The recipe can also be made without oil.

Then I suggest some biscuits.

2 -3 carrots
1 celery
2-3 capsicums
1 cup walnut kernels
500 g of oatmeal
5 cloves of garlic
2 tablespoons oil

Grate the vegetables and walnut kernels, add the oatmeal, spices and oil. Knead well. Allow the composition to rest for 10 minutes. Meanwhile, turn on the heat in the oven and grease the pan with oil. We then spread the obtained mixture so as to cover a large oven tray.

Then, before inserting the tray into the oven, cut the biscuits from one end of the tray to the other, vertically and horizontally. Bake for about 40 minutes at 200 degrees. After 30 minutes, check every 10 minutes. If you want them to be crispier, leave them longer.

We buy or harvest a kilogram of nettles, select them and wash them well.
