RECIPE PREPARATION Pea soup:

Chop the onion and cook a little. Add the grated carrot, then the pods, water and delicately. Bring to the boil until the pods are almost ready. Ingredients Eating green bean pods with pork:

  • 750 grams of bone-in pork (as far as possible defatted and the bone not exceeding 35% of the total) or 500 grams of diced boneless pork (leg, leg)

  • favorite greens (I used green parsley, you can use dill if you prefer)
  • optional: 1 tablespoon cornstarch
  • 1 bay leaf
  • salt and pepper

Some clarifications:

Before moving on to the preparation steps (very simple, by the way) I want to make a few clarifications:

  • soup: any food whose liquid base will be a meat (or even vegetable) soup will have a different quality than one in which only water is added. The soup is about the care and love I mentioned in the introduction. So, it can be done with water, the food will be good but with soup it will be even better.
  • if you use very young carrots, I recommend that you blanch them for 2 minutes in boiling water and then soak them in ice water, adding them to the food only at the end. If you use ripe carrots, cut them into suitable cubes and feed them together with the onion.
  • frozen green beans are already blanched. If you use fresh pods, I recommend that you subject them to the same thermal shock (bleaching) procedure that I recommended for carrots, in order to keep their beautiful color.

Preparation Eating green bean pods with pork:

1. Heat the oil in a deep, wide pan or saucepan and quickly brown the meat on all sides.

2. Remove the browned meat in a bowl and keep warm. In the remaining fat in the pan add the onion, celery, pepper, 2 of the garlic cloves. Now add the diced carrots, if you use the ripe ones. Sprinkle with a pinch of salt and reduce the heat. Fry the vegetables until they start to soften. Add the meat on top of them, along with the juice he left in the bowl (pictured left). Add the bay leaf and hot soup (or water). Cover with a lid, reduce the heat to low and simmer until the meat is tender. If necessary, add a little more hot water.

3. After the meat has tenderized, remove it to a mincer and allow it to cool before deboning. Obviously, if you use boneless meat, you don't have to do that anymore. Add the green beans to the remaining liquid. If you use fried young carrots, now is the time to add them to the green bean meal. Only if absolutely necessary, add more hot water.

After the food boils, add the diced tomatoes (pictured above, right). Bring to the boil over a suitable heat, without a lid, until the green beans have tenderized without being extremely boiled and have become porridge. Then add salt and pepper to taste and the 3rd clove of crushed garlic. Add the boned meat cut into cubes and bring everything to a boil. If you want a thicker sauce, you can add 1 tablespoon grated cornstarch dissolved in 2-3 tablespoons of cold water.

Service

4. Sprinkle our green bean meal with green beans and serve hot. I also made a little polenta in which I incorporated a drop of butter and arranged the food on top of it. It was wonderful, the polenta absorbed the so tasty sauce of the food.

INGREDIENT:

1 kg of beans
2 carrots
1 parsley root
1/2 green bell pepper
1/2 red bell pepper
2-3 large tomatoes (about 500g)
1 large onion
1/4 small celery
juice from 1 large lemon
a few larch leaves
salt
pepper
1 -2 tablespoons hardening oil
2 l vegetable soup
green parsley for serving

We clean the bean pods from the tails and tips, then we wash them very well under running water and break them into 2-3 pieces. We give the carrots through the large grater. Cut the peppers into cubes and heat them together with the carrots.

Boil the tomatoes in hot salted water and peel them, then cut them into cubes. We put in the vegetable soup the bean pods, the hardened vegetables, the whole onion (we prick it with a toothpick from one side to the other), the celery and the tomatoes. Season with salt and pepper, depending on taste.

Let it boil for 10-15 minutes, then add the lemon juice, the larch leaves and let it boil for another 10 minutes. Taste the soup and add more lemon juice if we want it more sour.

Serve both hot and cold, adding a little green parsley to the plate.


Ingredients for bean soup (smoked or fasting)

Cooking time: 1 hour 30 mins

  • -400 g beans
  • -2 smoked sausages or 2-300 g smoked kaizer, bacon (optional)
  • -1-2 carrots-about 250 g
  • -1 large bell peppers
  • -3 tablespoons oil
  • -2 onions-about 300 g
  • -1 tablespoon of tomato and pepper paste broth
  • -200 ml tomato juice
  • -1 teaspoon salt
  • -1 pepper knife tip
  • - thyme a teaspoon tip (optional)
  • -parsley and green dill, half each

The first time we cut all the vegetables according to our preferences, I like thin slices. Cut the smoke and heat them in the 2 tablespoons of oil for about 10 minutes, until they start to soften slightly. Add salt, pepper. Pour 3.5 liters of water over the vegetables and let it boil over medium heat until the vegetables are cooked. If you use fresh pods, add them after adding water, then add tomatoes and greens.

When the vegetables are cooked, mix the sour cream with the flour, I use a whisk, so it doesn't stay lumpy, add 2 tablespoons of soup over the sour cream, mix well, then pour over the soup and let it boil twice. At the end we taste and season with salt and pepper. Sprinkle with chopped greens and serve with green onion salad. Good appetite !

  • 550 g pod beans (weighed after cleaning)
  • 3-4 tablespoons of oil
  • 1 medium onion
  • 150 ml concentrated tomato juice (or 3-4 fresh tomatoes)
  • 2 cloves of garlic
  • fresh thyme
  • salt and pepper
  • dill

How to prepare bean meal

First we wash, clean and break the beans into pieces.

In a bowl heat the oil and heat the onion with a pinch of salt until it softens and becomes glassy. Add the pods and a cup of water (about 250 ml), a few sprigs of thyme, salt and pepper to taste. cover and simmer until the pods begin to soften, about 15 minutes.

Then add the tomato paste, crushed garlic and cook for another 10 minutes.

*If you use fresh tomatoes, peel them, finely chop them and add them to the food.

When ready, turn off the heat and add the chopped dill.

Bean cream soup

Bean cream soup is wonderful! Honestly, I don't think there is a bean recipe I don't like. Ever since I was a child, I was the first at the table when my mother would eat beans or beaten beans. Yesterday was very bad for us, rain, cold, fog, an autumn day not exactly successful.

I had nothing ready for lunch and even though I had initially thought of making a potato pie, I chose this delicious bean cream soup in bread baskets. Baskets are crazy! Perfect for cream soups or salads, they are crispy and do not soften until about 2-3 hours after we put the cream soup in them.

I took the test yesterday, so try them without care. My baskets were small, but if you want you can make them bigger. And if you are in a time crisis, as I was yesterday, and we can't boil the beans, we can use a can of white beans with ingredients.


Ingredients Pea soup with sour cream

600 gr yellow pods
2 threads
200 ml sour cream
3 cloves garlic

3 tablespoons flour
100 ml broth
1 large onion
2 cloves garlic
a few slices of smoked bacon (optional)
1 teaspoon with paprika tip
1/2 teaspoon pepper
salt
a little bit of oil

Preparation Pea soup with sour cream

  1. The pods are cleaned at the ends and break into 2-3 pieces. They are boiled with 7 cups water, larch and salt. Leave on medium heat for 35-45 minutes, until the pods are cooked.
  2. This time we are preparing the rantas: onion and 2 cloves chopped garlic, fry in a little oil when soft, add flour, mix for 10 seconds (do not let the flour brown, it will become heavy for the stomach) and quench quickly with the broth and then add about 150 ml of water. Salt, pepper and add the paprika. It doesn't matter if lumps form. Boil for 1 minute.
    * to make the rantas even tastier when you cook the onion and garlic you can add a few slices of smoked bacon will not remain in the soup, but will give a good taste.
  3. Pour the rantas in a strainer that you place in the soup and with a wooden spoon stir in the rantas until it dissolves. Discard what is left in the strainer.
  4. Boil for 5 minutes, then turn off the heat.
  5. Dissolve sour cream with hot soup (about 5 poloni soup) and then pour it very very slowly into the soup and stir continuously so as not to cheese. Crush the remaining 3 cloves of garlic in the soup. Turn the heat on again and bring to a boil. Suitable for salt.
  6. Serve it sprinkle with parsley or dill freshly chopped.
