cups shredded cauliflower (about 1/2 of a large head)

oz sharp cheddar cheese

1/2

cup all-purpose flour

tablespoons Buffalo hot sauce, plus more for serving

    Preheat oven to 400°F. In a food processor, pulse raw cauliflower until it’s finely shredded.

    In a medium bowl, stir together shredded cauliflower with grated cheese, egg, flour, hot sauce and a pinch of salt. If the mixture is very wet and doesn’t hold its shape, add more flour by the tablespoon until desired consistency is reached.

    Lightly oil a baking sheet and measure out heaping spoonful-sized balls onto the sheet. Don’t worry too much about shaping them, but do leave some space between each ball. You should get 20-25 tots.

    Bake the tots for 15 minutes until lightly crispy on the bottom. Then flip and bake for another 15-20 minutes until very crispy. Remove tots and serve with extra hot sauce!

In fact, if you mention tater tots to them, I’m not even sure that they would remember exactly what they are. And given that tater tots are, um, slightly processed, I’m ok with that.

Because if you’re going to eat processed food, it might as well be an Oreo, right?

My kids also have not yet jumped on the cauliflower bandwagon with me. Shocking as that is. But despite this, coupled with their disdain for tots, when I saw Cheesy Baked Cauliflower Tots from Kalyn’s Kitchen, I thought there might be hope.

Which seemed to be just.the.ticket because both kids ate them.

Using the microwave and a food chopper (I love my mini one and use it exclusively), you can make quick work of the steps below. With just ten minutes, if that, of actual hands-on work, it’s a very simple recipe that you can pop into the oven quickly while you get the rest of dinner ready.

Cheesy Baked Cauiflower Tots
Recipe slightly adapted from Kalyn’s Kitchen

Ingredients:
1/2 large head cauliflower, coarsely chopped
1/3 cup reduced-fat sharp cheddar
1/4 cup coarsely grated Parmesan cheese
2 T whole wheat flour
1/4 tsp. salt
1/2 tsp. Mrs. Dash
freshly ground black pepper to taste
1 egg

Preheat oven to 400F. Spray a mini muffin tin with non-stick spray. Remove the outer leaves of the cauliflower, and coarsely chop the cauliflower. Place in a microwave-safe bowl, cover with plastic wrap, and microwave 2 minutes, or until slightly soft. Remove the plastic wrap and let the steam escape. Drain any water that might have collected.

I wanted these to work so bad, but they fell apart, even with freezing for 30 minutes. I started to cry and threw the whole mess in the trash. I am sure I just screwed something up. Still gave it 2 forks since it wasn't hard, just a bit time consuming.

My toddler loved these. I used corn flake crumbs instead of panko, as that's what I had on hand, and they came out fine. Incidentally, this makes them gluten free, so a useful substitute for those avoiding gluten.

Lovely dish! A few points from my experience: no microwave so I just threw it all in the oven for a few minutes, that seemed to work. Think it's an essential step for it to hold together. I also really had to roll them for a while before the tots held their shape, and even then it was a bit touch and go in the dredging process, a few fell apart. But easy enough to press them back together and the effect was unnoticeable, though those ones were a bit messier. I baked them and would do that again I think they would be a tad too greasy in the fryer. Overall a big hit with the kids especially.

I made these exactly as the recipe described and they're a total no-go. It looks good but it's an unappetizing combination of flavors, and they're not easy to handle. So it's a lot of work for a disappointing result. There are good ways to use cauli as a low-carb potato substitute, but this isn't one of them.

Note that 1/2 cup of cheese is 2 oz, not 1 oz. Made this with broccoli instead of cauliflower. Did not add oil to panko crumbs but sprayed with olive oil and cooked in air fryer 10 min at 400F.

Any recipe that calls for a microwave is not for me. At least offer an alternative, or tell us what you want the veggies to look like after microwaving them so we can substitute and cook them on the stove.

What, precisely, is healthy about these? I bet they're good, though.

This was really tasty but Iɽ give it 3 1/2 forks for sloppiness. The tots didn't easily hold together and to add oil to the panko just made it worse. Next time, and there will be a next time, I'll leave out the oil and follow BostonBaker's suggestion about brushing with melted butter. We ate every crumb!

Airfryer Buffalo Cauliflower Tots

I was digging through my freezer trying to find something easy for dinner one night and ran across a bag of frozen Cauliflower Tots. I have used these before in recipes, such as this Light Taco Cauliflower Tot Hotdish as well as just cooking some up in the Airfryer as a side dish. This time, an idea for Airfryer Buffalo Cauliflower Tots struck me as a great idea. It would make a fantastic game day appetizer that is low carb and healthier than traditionally fried buffalo chicken!

Simply toss a whole bag of califlower tots in your arfryer on the highest temperature setting and cook for 20 minutes, tossing midway through. Toss the tots in a bowl with a few tablespoons of buffalo sauce and return them to the airfryer to crisp them back up. After another 5 minutes you will have perfectly crisp Airfryer Buffalo Cauliflower Tots that have just the right amount of spice!

You can sprinkle the them with some crumbled bleu cheese, serve them with celery sticks and ranch, or just enjoy them as they are! These vegetarian tots are the easiest two ingredient recipe you will make and are great for a last minute snack to serve while watching your favorite team play. If your team is anything like my Minnesota Vikings last Sunday, these tots will be far more enjoyable than the game&hellipugh!

One of my favorite parts of this recipe, is that cauliflower tots have become so mainstream that even my small town grocery store carries them in their freezer section! If I can find them at my grocery store, I am sure you will be able to find them at yours.

I was chatting with the owner of the grocery store as he was checking me out and he mentioned that he recently tried the cauliflower tots for the first time. He said he baked them much longer than the package instructed to get them as crispy as possible. He thought they tasted like deep fried cauliflower instead of actual tator tots and I think that is a really good descriptions for these.

You could certainly make these in your oven by increasing the temperature and cooking time, but that is the beauty of the Air Fryer after all. It allows you to get things extra crispy in a fraction of the time that a traditional oven does!
