RECIPE PREPARATION Broccoli and celery cream soup:

Peel and chop the onion.

Celery is cleaned and cut into pieces.

Broccoli bunches are opened.

Put the onion in butter in a pot to cook. Add celery.

Add 1-1.5 l of water and broccoli. When the vegetables are almost cooked, take the pot off the heat and pass it with a blender.

Season with salt and pepper and put the pot on the fire to boil a few more.

Serve with sour cream or yogurt.

Prepare a pot of water to cook the vegetables with a pinch of salt.

We will clean the vegetables, wash them, cut them into cubes and put them to boil (less broccoli, which will be put to the end).

When they are cooked, add the well-washed broccoli bunches and let it boil for another 10 minutes.

Then drain the vegetables in a strainer, put them in a blender with butter (which will give the soup a creamy texture), mixing until you get a fine cream.

If the broccoli cream soup is too thick, put it back in the pan, add a little more juice from the cooked vegetables to the desired consistency and bring to a boil.

Broccoli cream soup will be served in bowls with 1-2 tablespoons of sour cream on top, plain or with bread croutons.

1. Heat the butter and oil in a pan over medium heat until the butter melts. Add onion and celery, stirring occasionally, until soft, 4 to 6 minutes. Add garlic and parsley, stirring for about 10 seconds.

How to make broccoli cream soup with sour cream and croutons?

I prepared my ingredients: broccoli, green onions, garlic, rice.

I rinsed the broccoli cap under a stream of cold water and drained it well. I started to cut the small bouquets with scissors. I placed the most beautiful and tender ones in a separate bowl. Some of them will go to the base of the soup. I cleaned the stem of the drier portions and cut it into cubes, along with the thinner stems.

I also chopped onion and garlic. I chose a suitable pot (about 3 L) and I heated the oil in it together with the butter (without smoking!). I sautéed the onion and garlic over low heat for a few minutes, until they became glassy, ​​without browning. I added the rice (dry) and hardened it until it became translucent. I actually made a sofritto, just like risotto & # 8211 see the recipe here.

I added diced broccoli (stems and some of the bouquets) to the pot and mixed well. I seasoned everything with salt and ground black pepper. After about 5 minutes I turned off everything with 2 L of hot water & # 8211 it would be good to have Chicken Soup handy.

How much broccoli cream soup is boiled?

It doesn't take long from now on. I raised the flame from under the pot and brought the soup to a boil. From the moment it boils, I timed it for 20-25 minutes. In fact, we are interested in the rice being well cooked so that it can be mashed. It is best to taste and see if the berries are soft. Boiling can take up to 30 minutes. During this time the soup decreases and the liquid does not need to be filled.

I put out the fire under the soup and pulled the pot aside. I left it to cool for 5 minutes and then I passed it with the hand mixer (or blender). I passed it through a sieve and put it back in the pot.

To make four servings of broccoli cream soup, you need four tablespoons of oil, a large, finely chopped onion, half a large celery, three leeks (if you don't have leeks, put another onion and a clove of garlic ), a suitable potato, a finger-thick piece of butter, a liter of water or chicken soup (you can use a cube of chicken concentrate), 200 grams of grated Parmesan cheese (or another dry cheese that can be grate finely), a large broccoli cape (goes with frozen broccoli), fresh parsley, salt and pepper and two tablespoons of sour cream.

Put the butter and oil together in a saucepan. Add onion, leek, finely chopped garlic and cook for a few minutes. Add salt and pepper and add the grated celery. Keep cooking for a few minutes. Add the potatoes cut into pieces and then water, enough to cover the vegetables well. Let everything boil under the lid, over low heat, for about 15 minutes and add water if needed.

Broccoli herbs. Add the stewed vegetables, only when they are well penetrated and boil everything together in the soup for about 10 minutes. Use a blender and turn the soup into cream.

Match salt and pepper. Put the Parmesan cheese, mix and set aside immediately. Add sour cream and parsley. Serve crouton soup or toast. You can add pine or pumpkin seeds when serving.

Then put them aside in a strainer, keeping 300 ml of the water in which they boiled. In a saucepan, place the vegetables and add the remaining liquid and preheated milk. Season with salt and pepper to taste and let it boil for 2-3 more minutes at the right heat. Add the butter and pass the vegetables with a vertical mixer. Cut the bacon into cubes and brown it in a non-stick pan until crispy. Serve the soup warm and decorate it with bacon, your favorite greens and a sweet paprika powder.
