RECIPE PREPARATION Mold cheese, ionatan apples and beetroot jam:

Cut the cheese into cubes, wash the apple, cut it into quarters and insert the pieces of cheese. Everything is covered "artistically" with beetroot jam (see recipe here: //retete/dulceata-de-sfecla-rosie-37169.html).

It is served as such or with black bread with seeds. I assure you it's an appetizer madness, the sweet-salty taste is insane;)

The Easter holidays are fast approaching and that's why I thought that maybe you would be interested in some ideas for decorating the plates with goodies.
I prepared these sets on other occasions, but I thought it wouldn't hurt an extra idea for the young housewives.


Plate with: stuffed pike, donuts with light mayonnaise and red caviar, stars with cheese and grapes with cheese and mold.
The decoration in the middle of the plate is made of beet roses and french fries, all arranged on a bed of lettuce.

Salted biscuits with cumin on which I put urda with dill and goose liver pate, grapes, pickles and tomatoes, lemon slices.


And here we have capsicums stuffed with dill cheese, decorated with halves of black olives, ham rolls stuffed with liver pate and hard boiled eggs given by grater and mixed with mustard.
Decor with cucumber and radish.

Maybe you will say that too often the cheese paste with dill is repeated, I want to say that these plates were made at different meals, on different days.


How to color eggs in yellow with turmeric or turmeric?

To get the yellow color I chose to color the eggs with turmeric powder (turmeric).

I also found variants of yellow Easter eggs colored with saffron, which seems more than out of place considering the price of saffron. What's the next step? Do we polish them with 24k gold?

Turmeric is affordable and colors quite nicely and intensely. If the eggs are white, the color is even brighter.

In a large enough pot I put the eggs, 2 large tablespoons of turmeric, I added water (1 liter) and I boiled everything over low heat, just to bubble. When they started to boil I added 2 tablespoons of vinegar. The eggs must be completely covered with water. I let it boil for 15 minutes. Then I turned off the fire and left the pot to cool on the table until the next day.

In the morning I took them out and put them in the formwork. The color intensified a lot. I greased the eggs with a piece of bacon to get a nice shine. After applying the fat, the eggs seemed to lighten, the color intensified. It's a warm yellow to orange.

The result is satisfying, the eggs turned out beautiful. I will definitely repeat painting Easter eggs with turmeric.

Flavor in dishes

Ingredient:
For the dough:
500 g flour
200 g cold butter with 82% fat
3 eggs
80 g powdered sugar
80 g thick cream with min. 20% fat
a pinch of salt
1 teaspoon vanilla essence or 2 sachets of vanilla sugar

For the filling:
2.5 kg apples
60 g sugar
100 g ground walnuts
cinnamon powder


For decoration:
1 yolk
2 tablespoons milk

Method of preparation:
Weigh all the ingredients for the dough and then mix them as fast as the cold butter. The dough does not knead much because the result will not be as good. For the dough we do not want to form the gluten network that makes the dough elastic. You get approx. 1 kg of dough. Wrap the dough in cling film and quickly put it in the fridge for an hour. Any fresh dough needs time to relax and cool. If at first the dough looks soft and sticky, the relaxation time in the fridge will strengthen the butter in it and give it firmness.

Spread the grated apple juice over the ground walnuts. Apples do not need to be hardened. Smooth the apple layer nicely so that it has equal thickness everywhere.

Sprinkle sugar and cinnamon on top. I only put 60 g of sugar because I had sweet and sour apples. If the apples are more sour you can add more sugar. I used a spoon to get the sugar into the apples.


Beetroot with horseradish

Why so late? You already know my story with vinegar and all the things I refused to eat for many years because of it. Beets and horseradish were the main targets. When I realized how much I like both, I started consuming them with great pleasure. Then my taste buds understood the role of vinegar in food. And from time to time I came to this salad. In the last year I have tasted many beetroot salads with horseradish, sometimes even a few jars from different sources in parallel, until I realized how I want my salad to be perfect. I took into account:
- color: to be vivid, with fuchsia reflections, not dark to brown, the color is generally given by the variety of beet used but also by how much you bake / boil it
- texture: a little al dente, not to be porridge salad here we must be careful how much we cook / boil I prefer grated salad (or at least cut into small cubes) over the slice. just a matter of personal taste
- taste: all the balanced elements give the vinegar a little acidity and to balance the sweetness of the beet, without feeling especially in the mixture (so as not to scratch my sensitive papillae ) horseradish neither too little as it looks faint salad too much to cover the taste of beets

You know how good this salad is, but I especially like this potato stew.


Moldy cheese, ionatan apples and beetroot jam - Recipes

For a long time I thought that beets can only be eaten boiled or baked. How ignorant. :))
Until I discovered this recipe in a book by Jamie. Which recipe uses raw red beets. It was a pleasant surprise. The taste is not as pronounced as when cooked or boiled, but instead the texture is much different, a little more crunchy.

Ingredients (for two people):
- 1 medium red beet
- 1 seems a little bigger
- 100g of goat or feta cheese
- 4-5 tablespoons of olive oil
- juice from half a lemon (or even more, depending on taste)
- salt and pepper

Peel a squash, grate it and squeeze the juice. I cut them out of the knife, but if you're comfortable, a more competent grater would work, like the one from tele-shopping.
Mix them, sprinkle diced or crushed cheese on top and then put the olive oil and lemon. Mix lightly and season with salt and pepper. And that's about it, it's not even possible. :)

Note: do not use that feta in the box (danish feta or as it is called) because it is a pity. Take the original face, you can find it at the supermarket: Olympus or La Dorna brands or at Greek delicatessens (the only one I know is in Piata Floreasca, there was another one in Pipera but it closed).
In case you haven't found the feta, you can confidently replace it with goat cheese, also Olympus.
