Golden dumplings

In a 2l bowl, mix the yeast with the sugar and warm milk. Leave for a few minutes. A foam will form.

Add the egg and mix. Add butter, vanilla, rum and salt. Mix.

Add flour and mix with a spoon for 6-7 minutes. The shell is too soft to be mixed by hand.

Gather the whole crust from the edges with a spatula.

Cover the bowl with plastic wrap. Leave the bowl at room temperature until the crust doubles in volume (about an hour)

Remove the crust on the floured table. Sprinkle flour over the coca. Spread 1 cm thick sheet. Cut the sheet into squares with a side of 5 cm. On each square put ½ teaspoon of jam.

Gather the edges of the crust to form a dumpling. Repeat until you have made all the dumplings.

Grease a heat-resistant pan well with butter (and a pan is good). Pass a dumpling through melted butter, then through the nut + sugar mixture and put it in the pan. Repeat with the other dumplings and place them next to each other, not crowded. When you finish the first row, start another one on top. Finally pour the remaining butter and 2 tablespoons of walnuts on top. Let rise for half an hour. During this time, preheat the oven to 190C. Bake for 30-40 minutes at 180 C.

Remove the pan from the oven and let the dumplings cool a bit. Eat them warm.

On the other hand, there follows a period of fasting in which we prepare our souls for the great holidays that follow and the body for the assault of fats specific to traditional Christmas or New Year dishes. We now find in Selgros a lot of seasonal products, the fruit of the autumn harvest: all kinds of roots perfect for soups or broths, onions of the variety and especially leeks - so sweet and good in stews, cauliflower, pumpkin, etc.
Whether you want to make creamy, creamy, hearty soups, or you want longer mugs in the cup as they say, it doesn't hurt to replace croutons or bread with other additives specific to the first course: dumplings, noodles or even pancakes.
We present below some old recipes of such delicacies, collected from the first cookbook printed in Bucharest, in 1847 (we worked after the 1849 edition), recipes collected and tried by Maria Maurer.
Who was Maria Maurer, we find out from Simona Lazăr who edited, transliterated, annotated and prefaced the latest edition of the book, which is currently being published by GastroArt:
We know that she is the first female representative to publish a cookbook in the Romanian Lands. Too many "authors" did not exist in the rest of the continent (in Italy, the first author is reported in 1800), but since the seventeenth and eighteenth centuries we find their works in England, Germany, the United States and, finally, in France. . In our country, in the 19th century, four women will write gastronomy books, and in the 20th-21st centuries, they will dominate the genre literature market.
We also know about Maria Maurer that she was Saxon, educated in the housekeeping schools and pedagogical institutions of the Austro-Hungarian Empire and that she had come to work in Bucharest half-baked, half still dependent on the mentalities of the caftan era, in which women had their place in family and society. The woman was - as Constantin Bacalbașa would write a little later - the minister of interior (interior) [1] of the Wallachian family, leading discreetly or with a strong hand the household (including cuhnia). In order to train these future wives and mothers - matrons, as they were called at the time - the local boyars made governesses / teachers educated in the West, to teach them both music, and embroidery, and culinary art (often just to know how to follow the slave cooks, and not to cook themselves). But, in 1843, Elisabeta Știrbey, the wife of Prince Barbu Știrbey, founded the first girls' school in Bucharest with teaching in Romanian. In the 1840s, when we find Maria Maurer in the capital of Wallachia, we can talk about a "Bucharest of pension girls" who were in great need of teachers with a big soul and the knowledge to teach a little bit of everything, including gastronomy. I searched for Maria Maurer's name in the documents of the Ministry of Cults and Public Instruction, at the National Archives of Romania (inventory 2533), but I did not find any document - this means: 1. Maria Maurer did not teach in any of the girls' public schools 2 she was not the director of any boarding house - because she would have needed the approval of the Ministry, for that 3. her cookbook, even if it was used in the boarding house where she teaches, was not recommended for use by public schools and boarding houses. We cannot be 100% sure of these conclusions - as I said before, it is an area still sufficiently explored, so that new information can appear at any time, changing the conclusions.
What do we know concretely? In those years there were (not yet) textbooks that were specific to the subjects taught in a girls' school, and they were written as the need arose. So with this collection of recipes that, at first, he had only used to study the ladies. We learn this from the preface to the two editions of 1849 (second and third): "This book, so necessary for marriage, was written by me two years ago only in favor of my beloved students, whom I raised by the little ones, and whose happiness I look at in the first wish of my life ”[2], writes Maria Maurer. Being dated "Bucharest 1849, May 1", the preface offers that "clue" that confused the authors of RCE, making them consider that the princeps edition appeared in 1847. In fact, she only says that she then wrote the collection of recipes - probably to make the process of teaching / assimilating household knowledge easier. Further, Maria Maurer tells us that "several honest and wise ladies" - who could be both members of the school board and mothers, aunts or grandmothers of her students - urged her to print her work, " in order to use others from it, because this is the first cookbook, written in the language and with the measures of Wallachia ”[3].
We know more about the author than what her writing reveals to us - rigorous and without flourishes, "chiseled" during the German school years. We no longer meet - as in the Kogălniceanu & amp Negruzzi couple - any style figure, but neither the well-dosed details from the recipes translated by Postelnicul Manolachi Drăghici (and which had as author one of the culinary art professionals from France of good taste). Maria Maurer's recipes are simple, easy to follow, easy to prepare. Only easy-to-prepare ingredients are used in Bucharest a century and a half ago - even if some will be amazed to find artichokes and capers here (in addition to the native Christian apples), they could be procured even then, because we were on the route of some exchanges trade between East and West and vice versa. Practical and accessible, with five (or maybe six) editions published in two decades - it is the best-selling cookbook in the 19th century in Romania”.

Rub 50 ounces [5] of melted butter, well, until white [6] then put 2 tablespoons of water, a little salt and 4 eggs [7] one after the other [8] inside, mix them well and thicken them with a liter of good semolina and, when the meat juice boils, put egg-sized dumplings and boil them covered for half an hour. If it happens to swallow a lot of juice, pour more meat juice or some water into the soup.

At 50 drams [of] butter rubbed well, put 5 eggs one after the other, a little salt and grind the grated cheese [9], mix them well then make dumplings as big as walnuts, roll them [10] in flour and, after boiling the meat juice in a boil, put them inside [11] and boil them, covered, for half an hour.

Rub 50 ounces of butter with 3 tablespoons of water well until white and then put in 3 egg yolks, 3 whole eggs, a little salt, three tablespoons of good flour, three tablespoons of boiled and grated potatoes, mix well and, when the meat juice boils, put them inside and boil them for a quarter of an hour covered.

At 30 drams of well-rubbed butter, put 4 eggs one after the other, a little salt and 50 drams of good flour, beat them well then make dumplings and boil them like potato dumplings.

Take a piece of boiled or fried meat, the size of a goose egg, chop it, with a little onion and parsley leaf, finely chop 50 ounces [of] butter until white, add a pinch of salt, 4 eggs one after the other , the minced meat, a grated bagel and two tablespoons of good flour, mix them well then make dumplings the size of a walnut, roll them in flour and, when the meat juice boils, throw them inside and boil them , covered, half an hour.

Grease a tray well with butter, sprinkle it with a loaf of bread or grated bagel [13] and put any crust you want [14] of the above written [15] inside, bake it in a nice brown oven then cut it small into four corners, put it in the meat juice and let it boil for a quarter of an hour.

Beat 6 eggs with a pinch of salt and 2 tablespoons of flour as well as then, when the meat juice boils, drop with the spoon inside and let them boil for a minute, then put them on the table.

Take [16] each person a pancake, cut them into noodles, put them in a bowl, pour hot meat juice over them and put them on the table.

I take for granted what I read and I trust. But to be honest, the hope of miracles for my family's health doesn't necessarily make me use it. I just like turmeric. I like its subtle aroma, almost imperceptible, but still very present in any preparation I would add.

I like the color it leaves in egg-free doughs, such as salty dough, for example, or in vegetable soup. I also like to add it to the jar of honey and cinnamon so I have it handy for teas. But I just hadn't thought about putting it in milk at all. After seeing the article about & # 8220golden milk & # 8221 I almost slapped my forehead: & # 8220You know, how come I didn't think of that alone“?

A cup of golden milk now, in the cold season, it's more than welcome for anyone. In addition to all the health benefits of turmeric, it is an excellent, comforting drink with good taste. Everyone can personalize their cup of turmeric milk as they like, adding their favorite flavors: vanilla, cinnamon, anise, etc. The obligatory ingredients are only turmeric and pepper, without which the absorption of health benefits cannot be done correctly. I also add a little coconut butter to give it a little creaminess and a more pleasant aroma.

The preparation is as simple as possible: heated milk, over which turmeric powder is added (it does not make lumps), coconut oil, a little pepper and then sweetener and the rest of the flavors, according to taste. From what I read, golden milk is usually made with vegetable milk, be it almond, rice, soy, etc. It's not clear to me why, and I don't necessarily care about that. If we are fasting, I care about the appearance, if not, I do it with whatever milk I have in the fridge and I simply enjoy my tasteful drink.

11. Grate Parmesan cheese on top, decorate the salad with cherry tomatoes and quail eggs.

12. Serve the salad immediately.

1. Scald the prunes and cut them.

5. Grease each layer with cream, except the layer of onion with mushrooms. It is desirable to salt each layer a little.
