Apple roll

Peeled apples are grated and drained well. Mix with 4 tablespoons of sugar, lemon peel or cinnamon. Place baking paper on an oven tray and spread the apples evenly.

Whisk the egg whites. Mix the yolks with the sugar until they turn white, add flour and baking powder. The egg whites are slowly added to the obtained composition. Pour into the pan over the apples. Leave in the oven (preheated to 200 degrees) for 15-20 minutes.

When ready, pour over a kitchen towel so that the baking paper comes up. Remove the paper slowly, roll the roll while it is still hot. Cut into slices after it has cooled.
