Fasting cookies

I used only half of the quantities that were for these cookies and I got 13 pieces (26 halves).

I started by making the dough which is very easy to make, the margarine left at room temperature before being used is mixed with powdered sugar, then in turn I added salt, baking powder, a tablespoon of water and vanilla essence.

Incorporate the flour in two tranches and knead until it no longer sticks to your hands. (this also happens immediately);)

I covered it with cling film and put it in the freezer for 30 minutes and then another 30 minutes in the refrigerator.

Place the dough on a floured countertop, spread a thin sheet and cut (form) the desired shape and place in a tray lined with baking paper.

They stayed in the oven for 15 minutes (in my case), then I left them to cool and I filled them with strawberry jam.

A goodness even if I am fasting.

Preparation of fasting biscuits with walnuts (tender cookies)

Prepare two stove trays that are lined with baking paper. Mix flour, starch, sugar, baking powder and ground walnuts. Add margarine (or butter) - which should be soft !, vanilla and mix until you get a dough that comes off the walls of the bowl. I use the planetary mixer, with the dough hook, but it can also be kneaded by hand.

The obtained dough is wrapped in plastic wrap and left to rest in the fridge for at least 30 minutes. Anyone in a hurry may skip this step, but I prefer to leave the dough to rest, even the unleavened ones. This rest time binds the composition better and makes it less crumbly. But, as I said before, if we are in a time crisis, we can skip the rest stage and start preparing the biscuits immediately.

Preheat the oven to 175-180 degrees Celsius. Remove the dough from the refrigerator, remove the plastic wrap and portion. I cut into pieces of about 25 g each and got 30 biscuits. I gave them horseshoe shapes (as I remember I used to eat walnut biscuits at the neighborhood pastry shop) but you can make them in any shape you want.

The biscuits are placed in the tray, at a sufficient distance from each other, because in the oven they will grow, they will widen and we do not want them to stick together.

Place the tray in the oven for about 15 minutes (or until nicely browned). Then remove the tray from the oven and allow to cool. The biscuits must be completely cooled when we take them out of the tray, otherwise we risk breaking them.

Powder with sugar and store at room temperature in a sealed lid so that it does not absorb moisture from the air.

Fasting cookies / Vegan shortbread cookies

The kitchen of our house

My sister's visit to Medias could not go unnoticed and a small supply of clean white lard, meant to soften my sweet dishes this year. Eee, it was only 2 kilograms, not enough for a whole year, but enough to be able to take a bag out of the freezer every time I want to get the freshest cookies or pie sheets.
It's not the first time I've tried lard products, but it's the first time I've fully enjoyed them. oven, and the hot lard turned my somac over my head so much that it was the only piece I put my mouth on. Luckily, in the meantime I grew up, I learned what patience is, I let the cookies cool completely, to lose the smell of lard and to soften nicely. And the next day they were even better, and the second the same, until the fifth, when they were finished, but still without losing their special texture.

INGREDIENTS for 25 pcs = 1 tray:
100g lard (at room temperature)
100g old powder
1 small egg
lemon peel
50ml milk
200g flour
1/2 teaspoon baking powder
1 pinch of salt

Allow the lard to soften at room temperature, then mix with the sugar. Add the beaten egg with the milk, lemon peel and, optionally, the essence.

The flour is mixed together with the baking powder and salt, then it is incorporated in the mixture with lard, to obtain a fairly hard dough.

From this, cookies are formed with the spirit, with the biscuit press or in the meat grinder equipped with an extruder for biscuits. I recommend the last option, the first two forcing the strength of the hands or the durability of the press a bit.

The cookies are placed in a tray covered with baking paper, leaving 2 cm between the rows. At the top you can add pieces of walnuts or candied fruit.

Bake for 25 minutes, over medium heat, in a preheated oven. If during mixing you did not smell a strong smell of lard, during baking do not escape :), but the smell will disappear completely, as the cookies cool.
