Banana pancakes

Because I tried the banana cake and I liked the flavor, I said to try these pancakes, because I had some ripe bananas that no one ate anymore. They are very good, very flavorful and fluffy.


  • 2 eggs
  • 2 bananas
  • 100 gr butter
  • 200 ml drinking yogurt
  • 25 gr candied cranberries
  • 300 gr flour
  • salt
  • 1 tablespoon sugar
  • 1 sachet of baking powder
  • 1 teaspoon vanilla essence

For decoration:

  • heated quince pellet
  • slices of babane

Method of preparation

I didn't add much sugar because the bananas and cranberries were sweet and I served them with quince peel, which is also very sweet.

Put the butter in a bowl and rub it with the sugar and a little salt until it froths, then add in turn, eggs, yogurt and baking powder and mix vigorously to homogenize the composition well.

Peel the bananas and pass them through a blender or robot, then mix the two compositions and gradually add the flour.

We stop when we get a composition a little thicker than the cake.

At the end we add the cranberries and the essence.

Heat the non-stick pan (I worked on two pans) and put a composition polish in the middle of it.

Rotate it a little to stretch the composition and bake the pancakes over low to medium heat for about 1 minute on each side.

The composition in the pan should not be stretched too much as in ordinary pancakes, because it will become thinner and harder to turn.

We served them with quince peel, heated and banana slices.

Banana pancakes

Today we have a quick recipe for breakfast or any other time of the day when we want something sweet.

It can be made from only two ingredients: bananas and eggs + baking powder, but I chose to add a little flour.

They are good and fragrant and can be consumed by the little ones. Banana lovers will love them!

1 and 1/2 well ripened bananas

a teaspoonful of baking powder

1 tablespoon flour (optional)

1/4 teaspoon turmeric (optional, for color)

maple syrup & ndash for serving (optional)

& ndash quantities for about 7 pieces of 9-10 cm diameter & ndash

Lightly beat the eggs in a small bowl. We crush the bananas with the fruit in a medium bowl (we don't care too much for them, so that small pieces of banana remain).

Put eggs over bananas, then add flour mixed with salt, baking powder and turmeric (if using).

Homogenize the composition well.

Heat a non-stick pan on the fire and grease it with a little oil. We put 2 leagues in the composition (don't make the pancakes too big,

because they are fragile and can break when you turn them over).

Bake them for about a minute and a half on each side, carefully turning them with a spatula.

We continue like this until we finish the composition. Grease the pan with oil from time to time.

We serve them with sour fruits and maple syrup over them. I placed them as you see in the pictures and I have them
