Foie gras has long been the relegated to the world of high-end tasting menus and upscale dinners. One restaurant in Brooklyn has given this savory dinner dish a brunch makeover.

The Prospect Heights restaurant Faun has introduced its variation on the classic French dish of fois gras on brioche with one key difference: The brioche is French toast.

Every weekend chef Brian Leth preps 15 orders of this sweet-and-savory dish for the brunch crowd. The brioche French toast is topped with 2.5 ounces of Hudson Valley foie gras, toasted walnuts, and a drizzle of maple syrup. The seared protein provides a savory contrast to the sweet syrup.

If the brunch burger (which is really just a burger topped with a runny fried egg) can become a midday staple, why not foie gras?
