OH MY GOSH!! Bubba, you rocked my world. This is sooo yummy, and very easy. Remember to cook slowly, and be patient - it will get thick. I took it to a family BBQ (of native Texans, no less) and everyone raved. Can't wait to cook ribs with it. This is my new favorite sauce!!-24 Sep 2001

My God this sauce is fantastic!! I followed the recipe with only one change...used fresh onion instead of onion powder. I used this sauce with the Amazing Ribs recipe from this site (as did many of my fellow reviewers) and have gained major status in my family....all of whom love BBQ. Thank you Bubba for one of the BEST recipes I've found here yet.-26 Jan 2008

The Unexpected Secret Ingredient in Our New Favorite Wing Sauce

Sweet and sour and unctuous, lemon curd makes a surprisingly good wing sauce.

You might think that you&aposve grilled all the things that you can grill at this point in the summer. The burgers and steaks of July are but a distant memory, and the pressing concerns of the fall are just over the horizon. But there&aposs still plenty of time for grilling and outdoor sitting, particularly when you can turn to something as simple and delicious as easy grilled chicken wings.

Wings are a particularly good vehicle for sauces, as you probably already know. Buffalo sauce, ranch, and barbecue are the classics, but that doesn&apost mean you need to be limited to those options. Once you get the hang of grilling wings, you might end up doing it so often that you need other sauce options. So might we suggest this clever lemon-pepper sauce that uses storebought lemon curd to give the condiment its sour zip?

To make the sauce, you first cook garlic in a little olive oil or melted butter, just until the garlic is soft and the raw edge is gone. Then you mix in half a cup of lemon curd with water, salt, and pepper, letting the mixture come up to a simmer to allow the whole thing to reduce, a process that will take a few minutes. Once the mixture is warmed through and has reduced in volume slightly, add in fresh lemon juice, and, if you like, more pepper. Serve with chicken wings, or even just the rotisserie chicken you picked up and aren&apost sure what to do with.

So what is fish sauce?

Once you catch the tiniest whiff of fish sauce, you may believe it’s made during some ungodly procedure—no really, be sure to put the cap back on or else𠅋ut it’s actually quite simple: salt a bunch of fish (usually anchovies), let them ferment for months (even years), then squish them. The brown liquid that oozes out is fish sauce.

Please, don’t DIY this at home unless you want to make everyone in your house and your neighborhood quite angry.

Fish sauce is rich in glutamates, acids that read as umami to your tongue. So when fish sauce is used in any dish, you’re adding the same deeply rich, unctuous flavor you know and love in miso, seared beef, even aged cheeses. But in fish sauce, it’s amplified by several factors.

If you don’t want to use fish sauce, you can use aged Parmesan cheese as a flavor booster. It’s not as strong, but it’ll work. Canned or jarred anchovies will work, too. Just let them melt into your pan as you cook down any onions and garlic. Both of these packs a powerful umami punch, but even they can’t beat back the funk of fish sauce.

BBQ Sauce Recipe – Everything You Need to Know

Unlike something like a béchamel, there is not one single iteration of BBQ sauce. As regional tastes developed over the decades and centuries, so to the approach to BBQ sauce. Regional preferences for beef or pork seem to be one of the major motivating forces in what ingredients go into a sauce.

  • East Carolina. Most BBQ sauces can find their way home to this staple of the eastern half of the Carolinas. This sauce is known for its vinegar, pepper and pepper flakes and was often used to baste meat as it cooked.
  • West Carolina. Also known as "dip" in parts of North Carolina, this sauce is similar to the previous sauce but includes tomato product.
  • South Carolina Mustard. This German-influenced sauce features sugar, vinegar and yellow mustard the last ingredient results in this sauce's yellow coloring. All three Carolina sauces arose with a focus on pork.
  • Memphis. Take West Carolina sauce but trade out sugar for molasses. While Memphis-style BBQ is mainly used for pork sandwiches and ribs, it is not uncommon to encounter pulled pork in just about any dish that accommodates meat. Memphis pulled pork spaghetti is a curious thing that exists.
  • Kansas City. This evolution on the West Carolina sauce is thicker, sweeter and tends to be the most prominent style of sauce throughout the United States. Notably, it does not seep into meat nearly as well as other sauces, content to just stop at the surface. "KC Sauce" arose as a response to the wide variety of meats local to the area.
  • Texas. This vintage approach to BBQ sauce involves cumin, chilis, pepper and onion while skimping on tomato and sugar. The consistency is somewhat akin to a thin soup. Texas sauce tends to function in inverse of Kansas City sauce, being quite able to penetrate deep into the fibers of any piece of meat the pitmaster blesses.
  • Alabama White. This sauce gets its eponymous color from the inclusion of mayonnaise. Other key ingredients include apple cider vinegar, salt, sugar and black pepper. This sauce is commonly used for chicken and pork, rather than red meat.
  • Pittsburgh Red. This sauce incorporates tomato products, liquid smoke, vinegar-based hot sauces and crushed walnuts.

The Secret to North Carolina BBQ Sauce

In North Carolina, the term “barbecue” speaks exclusively about barbecued pork. Barbecue is defined as meat that is cooked over a flame to achieve a crispy edge and a juicy center. The pork meat will literally fall of the bone once it has reached the point of barbecued perfection. Traditionally, barbecued pork is important in North Carolina, but equally important is the barbecue sauce that is added. The flavor of the pork may be enhanced by a rub or sauce that is put on the meat. Rubs are added to the meat before cooking. The rub is a mixture of sugar, salt, pepper, chili pepper and other spices that are patted onto the meat. Rubs create a crisp barbecue “crust” on the pork and the flavor profile infuses the meat. During the cooking process, a sauce might be used to baste the meat. North Carolina BBQ sauce is also slathered on the meat when it has finished cooking. The texture of barbecued pork is pretty standard, but the flavor is going to be drastically changed by the type of sauce you put on your meat – North, South, Eastern or Western Carolina bbq sauce to be exact.

Barbecue in North Carolina has a history that runs deep. The Spanish brought pigs to America in the 1500s and they thrived in North Carolina. Abundant pork in North Carolina caused the locals to use and eat the whole pig in true villager fashion. The staple of roasting a pig over a fire holds to this day in the Carolinas. Pork may be cooked in many ways ranging from wood smoked to cooked in an oven. Regardless of how the pork is cooked, it is important to have the right barbecue sauce to accompany it.

Here’s the nitty gritty of North Carolina barbecue sauce. Vinegar and pepper barbecue sauce has been used for hundreds of years in North Carolina, possibly even before the 1700s. The use of vinegar and spices helped flavor the meat and enhance the eating experience. The vinegar based BBQ sauce made North Carolina barbecue stand out. In the 1900s, ketchup was first produced. Ketchup became a quick and flavorful addition to the vinegar and pepper BBQ base. Then, North Carolinians had two flavors of barbecue sauce from which to choose.

These two types of barbecue sauce define and divide North Carolina barbecue . Eastern North Carolina BBQ sauce is vinegar based. Whereas, Western North Carolinians add tomato ketchup to their vinegar based sauce. Eastern Carolina BBQ sauce cuts through the rich and fatty meat with a zing from the vinegar. As you finish your bite of pork, you will notice that your palate feels cleansed and not overwhelmed by the rich meat. Western North Carolina-style BBQ sauce adds an acidic bite from the tomato ketchup.

The amount of sweet, spicy and tangy you experience in your Carolina BBQ sauce are determined by the combination of ingredients used. All North Carolina barbecue sauces begin with vinegar. White vinegar can be used, but apple cider vinegar is preferred for the apple flavor it adds to the end result. Salt and pepper are a staple to enhance the flavor of the sauce. Crushed red pepper, cayenne or a pepper sauce may be used to add extra heat to the mix. Brown sugar or apple juice is found in some recipes to sweeten the taste. Eastern North Carolina sauce can be found with fresh garlic as an ingredient as well. Only Western North Carolina barbecue sauce will boast ketchup as part of the recipe.

Both these North Carolina-style BBQ traditions started in someone’s kitchen to bring family and friends together over a meal. Someone had to experiment with ingredients in the kitchen to test what would taste best on barbecued pork. Here are some recipes that have been held together by taste and tradition. Make these recipes for yourself and discover whether you like straight vinegar barbecue sauce or vinegar and ketchup barbecue sauce. These Carolina-style BBQ sauce recipes are worth mastering. With a few simple ingredients and in a few short minutes, you will have your own homemade North Carolina BBQ sauce.

  • ½ cup apple cider vinegar
  • ¼ cup packed light brown sugar

  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Whisk together all ingredients in a medium saucepan. Cook over medium, whisking occasionally, until ingredients are combined and sauce is just starting to simmer, 2 to 3 minutes. Cool to room temperature, about 30 minutes. Store in an airtight container in refrigerator up to 3 weeks.

Homemade BBQ Sauce Recipe

Have you ever noticed that your favorite BBQ joints always have their own homemade sauces and not store bought barbecue sauce? Did you notice how much better they taste compared to the store bought sauces? Through my travels, I have noticed that I enjoyed most of their homemade sauces and I wanted to recreate that amazing taste. The flavor of this sauce is really inspired by my favorite barbecue joints in Austin, Texas like Terry Blacks BBQ and Franklins BBQ.

My favorite sauces seem to have some consistent flavors. They typically are not overly spicy, they have a bit of tang / acidity (vinegar) and there is also a hint of sweetness. They are also more liquid (low viscosity) compared to store bought sauces. The lower viscosity sauce seems to compliment pulled pork and brisket much better. The lower viscosity sauce works great in a squeeze bottle.

After trying many different recipes, I finally came up with one that I really enjoy. First of all, it is a very easy homemade bbq sauce recipe. The ingredients are typically in every household, which keeps things simple. This is a very mainstream / classic bbq flavored sauce, but don’t be fooled, it is full of flavor and works well with so many dishes. We enjoy it on ribs, chicken, taco’s, fajitas, and scrambled eggs. This is an extremely universal bbq sauce. I typically like spicy sauces, but this is one of the few low spice level sauces that I can enjoy with my 8 and 10 year old daughters. And since it’s a favorite of my daughters, it becomes extra special, if I use the pink piggie spatula!

This homemade barbecue sauce only takes 25 minutes to make so you have something to do while your meat rests in the cambro!

Kansas City Style BBQ Sauce

Many of the great bbq chefs have their roots in Kansas City Missouri. The sauces are thick and sticky and when combined with the smoke of a great hardwood (oak), the results are magical. If you&aposre barbecuing with charcoal, there is an optional smoke ingredient, but my recommendation is to forego the added smoke flavor and go with smoking chips or better yet, small oak logs for a true Kansas City style BBQ.

Ingredients

  • 2 cups ketchup
  • 1 cup dark molasses
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground mace (1/4 teaspoon nutmeg can be substituted for mace)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon liquid smoke (optional)

Instructions

  1. In a large saucepan, add all the ingredients and cook for 5 minutes over a medium heat and then let it simmer for another 15 over a low heat. Once it&aposs nice and thick, it&aposs ready.
  • Make it 24 hours in advance and let it sit in a sealed jar in the refrigeration. With resting time the flavors meld and pop.
  • This will keep for 2+ weeks in the refrigerator and 6 to 8 weeks in the freezer.
  • This bbq sauce works great in baked beans.
