Fluffy pancakes recipe I thought of making a quick and easy dessert today, so I remembered this pancake recipe that I made other times and it was appreciated, only this time I made a chocolate sauce instead of jam as I had eaten. These little fluffy pancakes are extremely good and with nothing next to them in my opinion, so I advise you to try them.

- I used for pancakes:
- 5 eggs
- 280 ml milk
- 5 tablespoons sugar
- 3 sachets of vanilla sugar
- 200 gr of flour
- 2 sachets of baking powder
- juice from half a lemon
- vanilla essence
- For the chocolate sauce:
- 160 gr chocolate
- 300 ml whipped cream

Pancakes: I separated the yolks from the egg whites, I put the yolks in a bowl together with the sugar, lemon essence and juice and I mixed them well with the mixer until they doubled in volume and the sugar melted. I then added the milk, flour. and baking powder and I mixed the mixture.
In another bowl, beat the egg whites with a pinch of salt until you get a firm foam, then carefully incorporate the egg white foam over the yolks, mixing with a spatula from bottom to top without spoiling the foam.
In a pan, I put 2 drops of oil and then I took with a polish from the mixture made and I put in the hot pan. The pancakes turn on the other side when we notice that the dough makes some small bubbles… about 1 minute it takes bake on one side after the pan is well heated.
Chocolate sauce: I put the sour cream in a saucepan, over low heat and when it warmed up I added the chocolate broken into pieces. I mixed well, taking the sauce off the heat, until everything was nicely blended and I got a delicious chocolate sauce.
I served the pancakes with chocolate sauce and a raspberry sauce that I had in the fridge.

A recipe for extra fluffy pancakes, very high if you struggle a little, tasty, to be honest, but not something spectacular. There are hundreds of pancake recipes in the world, and they are different in appearance, the taste is quite common. Honestly, I think a lot of work is in vain. I made them once, out of curiosity, but I don't think I'll get back to the recipe too soon. But if you want to try.

METHOD OF PREPARATION:
The secret to getting these tall, fluffy pancakes is to use eggplants to beat hard meringue and to use some shapes to fry the pancakes.
To start, mix the beaten milk with the yolk in a bowl. It can be mixed with a whisk, no mixer needed. Then add the melted butter, essence and citrus peel and mix. Sift flour previously mixed with baking powder and ammonia into the bowl.
Separately beat the egg whites with a pinch of salt until they form a foam, then add the sugar and mix at high speed until you get a strong and glossy meringue.
With the help of a spatula, gradually incorporate the meringue in the first composition, being careful not to leave the dough. Mix only until smooth. If you mix too much you will not get high and fluffy whites.
Heat the pan very well, without oil, and fry the pancakes for 2-3 minutes on each side, in the pan covered with a lid. If you simply put the dough in the pan with a polish, it will stretch and you will get some normal pancakes, like the American ones. They will not be tall,
If you want to get high pancakes as in the pictures you have to put the dough in a high ring. I don't have such high rings and I improvised a baking paper ring attached with a paper clip. It didn't come out perfectly circular. I think I had to make a stronger cardboard ring to wrap in baking paper. And I would have gotten a more beautiful shape.
Salted Pancake Cake with Tomato Sauce and Mozzarella
Make a pancake batter with milk, eggs, flour and a pinch of salt. For the amount of flour I wrote about 150 gr. because it is slightly variable, depending on how the flour is absorbed in the milk. It is important that the dough is not too liquid but not too thick.
Prepare the pancakes (not too thick) in a Teflon pan, greased with a little oil. The pan in which I prepared had a diameter of 18-20 cm. and I got 12 pancakes.
Prepare the tomato sauce: in a saucepan, put a clove of garlic, 2 tablespoons of olive oil, brown and add the tomato sauce, basil and salt if necessary. You can also use canned tomatoes finely chopped in a blender. If you like. . . you can prepare even more tomato sauce to put between the pancakes. Boil for about 10 minutes on the right heat, then remove the garlic.
In a round oven form, put in the tomato sauce, add a pancake and on top of the tomato sauce, diced mozzarella and sprinkle with grated Parmesan (cheese or other cheese that melts well). Layer until you have finished all the ingredients. Bake in the preheated oven, at an average temperature of 200 degrees, for about 25 minutes, until you see well melted mozzarella and browned on top.
Remove from the oven, leave to cool for a few minutes, portion and serve hot.
