Anatolian cabbage

A cabbage dish, of Turkish origin, which I love. When I served it, I sprinkled chipotle flakes on top of it.

1 cabbage about 1 kg
oil or lard
200 ml soup
3 onions
400-500 minced meat (pork or beef or mixed, to taste)
4 tablespoons broth
200 g telemea / bellows cheese / Feta
3 eggs
200 ml of milk
paprika, salt, pepper

Cut the cabbage into strips and fry in oil / lard, stirring not to stick. Add salt, pepper, paprika and 100 ml of soup. Leave to cover and simmer over low heat. 20 min.
Cut the onion into small pieces and fry with the minced meat. Add salt, pepper.
In a heat-resistant form, put a layer of cabbage, a layer of meat and cabbage. The rest of the soup is mixed with the broth and placed on top of the cabbage. The cheese is crushed into not very small pieces and placed on top. Eggs are mixed with milk and poured over the entire composition. Christmas menu 2010, classic menu with 7 dishes, winter

Amuse the eggs: foie gras, pumpkin, baked apple mousse. Rating: good to very good. The foam can be taken for any dessert

Cold appetizer: beetroot terrine with horseradish mousse. About once in the bar, the amount of gelatin on the red side was too small and I realized this just by putting the white layer. Rating: ok. Baba Ganoush

Low in fat and carbohydrates, rich in fiber, folic acid and vitamin C, cauliflower is among the healthiest stars of the season. As for the preparation possibilities, they are numerous. The gratin I propose to you today can be considered one of the simplest ways to prepare cauliflower, given that it does not require too many ingredients or who knows what complicated steps. Just keep in mind that it should stay in the oven for about an hour. In addition, if you have more time, it would not hurt to steam cauliflower instead of a pot full of water, because in this way it keeps almost all its vitamins and enzymes intact.

Cauliflower gratin can be served hot, but also at room temperature. It can also be served as a side dish to a steak or on its own, at a late dinner, possibly with a cream on top.
