Raspberry ice cream
Recipe of raspberry ice cream today is somehow the improved version of the other sugar-free raspberry ice cream recipe that you already know if you've been following the blog for a while. If the first recipe was a simple one, with sour cream and yogurt, this time I will write a recipe for ice cream with raspberries based on the classic ice cream recipe with a cream based on milk and egg.

This variant of raspberry ice cream recipe it's not as easy to make as the first one, where we simply mix the ingredients together and you're done. We must first make milk and egg cream, a cream that is made on a steam bath and requires a little patience. But it is a little creamier than the one without sugar.
I did it as usual using ice cream machine which, if you don't already have it, I recommend you to buy it because it's worth all the money, especially during the summer. I have an ice cream machine with a capacity of one liter and the quantities below are adapted for its capacity.
Maybe a little whipped cream would have worked in the composition, but it wouldn't fit in the device, so I gave up using it. However, know that it came out very creamy, appetizing and fragrant. Matcha ice cream

If you are on first contact with matcha, I recommend reducing the amount, I like it to be more concentrated and I use more. It has a special taste that you have to get used to.

Cherry ice cream
Because we like cherries a lot, we tried to do the same ice cream with cherries. If you want the quick version, make it like a quick strawberry ice cream.
In the recipe you can make a cherry sauce or you can put them whole. We opted for the last option.
It can be prepared with other fruits.
Peanut butter ice cream
Peanut butter ice cream it's a different ice cream, but definitely delicious. Those who love peanut butter will want to try ice cream.
It is prepared with fresh egg whites, if you do not want to eat them like this, you can beat them on a steam bath.

Prepare the ingredients.
Mix mayonnaise with milk. Add eggs, sugar, butter and vanilla essence, mix with a whisk, then add flour, baking powder and salt.

Heat the pan or special pancake plate, grease it with a little oil and pour a composition polish for each pancake.
When it is nicely browned on one side and small bubbles begin to appear on the top, it is time to turn the pancake to brown on both sides. Bake pancakes over medium heat to make sure they are baked on the inside, not just browned on the outside.
Pancakes can be served with fresh fruit or fruit puree, powdered with vanilla sugar or sprinkled with maple syrup.
Ingredients for the apple crumble recipe with ice cream
- 350 g green apples (Granny Smith)
- 100 g brown sugar
- 75 g melted butter
- 400 g digestive biscuits
How do we prepare the apple crumble recipe with ice cream?
Peel the apples and cut them into thin slices, then place them in a heat-resistant dish and sprinkle the sugar over them. If there are several layers of apples, divide the sugar and sprinkle between them.
Put the apples with the sugar in the preheated oven at 190 C for 10 minutes.
Meanwhile, crush the biscuits very finely, add the butter and mix.
Remove the bowl from the oven and sprinkle the biscuits over the apples and at the end we lightly press them with a spoon.
Put back in the oven and bake for 25-30 minutes until golden.
You can also add cinnamon when we cook the apples.
We recommend it to be served with 2-3 cups of ice cream, we prefer banana and chocolate ice cream but it also goes well with vanilla ice cream.

100 g sugar
50 g nuts
3 egg whites
25 g breadcrumbs
30 g household chocolate
1 l milk
35 g sugar
1 vanilla stick
Method of preparation:
In a bowl, with a wooden spoon, mix the yolks, sugar and nuts given by the machine until you get a homogeneous paste. Then incorporate the breadcrumbs, grated chocolate, flour and, at the end, the beaten egg whites.
Using a spoon, in a tray lined with waxed paper, put chocolate balls that you leave to bake for 30-35 minutes.
For the ice cream, bring the milk to a boil over a low heat, add the sugar and vanilla and let it boil for another 2-3 minutes. Separately, beat whole eggs in a bowl, then gradually pour the hot milk over the eggs, stirring constantly with a whisk. After it has cooled, leave the ice cream in the freezer for 4 hours.
Ice cream cake it is made as follows: with 2 biscuits and a cup of ice cream you make a delicious mini sandwich. Preferably, the biscuits must be heated beforehand, so that the mixture of texture and temperature conquers the audience!
