Potroace soup

Cut the meat into smaller pieces, wash and boil in salted water. Foam as many times as needed

Then add the onion and finely chopped vegetables and cook for 30-45 minutes.

Wash the rice well and add it to the soup. After the rice has boiled, add the cabbage juice and let it boil for a few more minutes.

Beat whole eggs and mix with sour cream. Add the soup from the pot, in a thin thread and mix well.

Remove from the heat and add the eggs with sour cream.

Put the pot on the fire and let it boil for 2-3 minutes, then turn off the heat.

Add chopped green larch and serve hot.

Method of preparation

Wash the meat well, then let it dry or wipe the pieces with absorbent towels.

The pipettes are scalded for 1-2 minutes, then drained.

In a large pot, put 4 liters of water with salt. Add the meat and pipettes and bring to the boil. Foam as many times as needed. When there is no more foam, put the lid on and let it simmer for approx. one hour.

The vegetables are cleaned, washed and put on the grater with large holes. After 30-40 minutes, add the vegetables and peppercorns and continue to boil. When it is almost ready, add the well-washed rice and leave it to boil.

In a kettle, put the cabbage juice on the fire and when it starts to boil, pour it over the soup and let it boil for a few more minutes. Remove from the heat and allow to cool slightly.

Meanwhile, mix the cream with the yolks, then with a polish, take it out of the soup and add it over the cream. Mix and pour into the soup pot, stirring until everything is smooth. Put the larch leaves and cover the pot, letting the flavors combine.

Serve hot, along with hot peppers and a corner of homemade bread.

Potroace-Ingredient Soup

1 onion
3 eggs
400 ml sour cream 20% fat
1 small link larch
2-3 tablespoons of rice
1 teaspoon salt

1 liter of sauerkraut juice (it dies on the straps as we call it in Bihor)
about 400-500 g carrots, parsley, parsnips, celery (together be so much)
800 g (neck, back, tartlets, hearts, chicken breasts or other birds)
1 tablespoon butter and 2 tablespoons oil

Potroace Soup-Preparation

We cut the meat into pieces so that you can put it in your mouth at once. The vegetables are cleaned, washed and then cut into small cubes. Put the onion on a fine grater (others prefer to cut it as small as possible). In about 5 liters of cold water, boil the meat with 1 teaspoon of salt. Bring to the boil and in the meantime collect the foam that forms (boil over low heat, slowly). After frothing we will add the prepared vegetables as described below.

While the meat is cooking, switch to chopped vegetables. In a saucepan put the butter together with 2 tablespoons of hot oil. Heat the chopped vegetables on it. Add the vegetables to the pot in which the meat is already boiling. Also now add the grated onion and let it continue to boil, Potroace soup , about 1 hour.

Wash the rice and put it in the pot to boil together with the chicken and vegetables for about 20 minutes. At this moment, put 3-4 strands of larch to boil together for a few minutes. Add the sauerkraut juice, the horseradish that salts and sour the soup and let it boil for another 4-5 minutes.

The egg yolks are mixed with sour cream and to this mayonnaise, add the dressing little by little from the hot soup, stirring constantly until we bring it to a temperature close to the soup.

At this point, add the sour cream dressing to the rest of the soup in the pot and, if necessary, season with salt. Stir to mix, turn off the heat and sprinkle with finely chopped larch.
The larch threads initially put are removed from the soup.
