Toasted Almond Parfait

Toasted Almond Parfait

Ingredients

  • 1/2 cup plus 3 tablespoons finely chopped toasted almonds
  • 2 cups chilled whipping cream
  • 2 teaspoons vanilla extract
  • 2 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped

Recipe Preparation

  • Using handheld electric mixer, beat sugar, egg yolks, corn syrup, and amaretto in large metal bowl to blend. Place bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Beat until candy thermometer registers 160°F and parfait base is thick and billowy, about 8 minutes. Remove bowl from over water. Continue to beat parfait base until cool, about 7 minutes. Fold in 1/2 cup almonds.

  • Beat cream and vanilla in another large bowl until soft peaks form. Fold cream into cool parfait base in 3 additions. Transfer parfait to 13x9x2-inch glass baking dish. Cover and freeze until firm, at least 4 hours and up to 2 days. Scoop parfait into goblets. Sprinkle with chocolate and 3 tablespoons almonds.

This Almond Granola is my husband’s favorite! When we lived in Australia, he traveled up to five days a week for work, so I’d make a big batch of this granola and these healthy blueberry muffins for him to take on the go. With his busy schedule and lots of flights, I wanted him to have a few snacks he loved. Sometimes I’d make a double batch of Almond Granola so it would actually last the four or five days he was gone.

This granola is incredible on its own as a snack and it makes a delicious addition to a parfait, yogurt bowl, or açaí bowl. We even like it for cereal with some milk poured on top.


INGREDIENTS

For the coffee soaking syrup:

6 ounces very strong coffee, cooled

1 tablespoon granulated sugar

8 ounces mascarpone cheese

1 teaspoon vanilla extract

3 tablespoons powdered sugar

l (7-ounce) package hard Italian ladyfingers

1/4 cup sliced almonds, toasted

1/2 cup amaretti cookies, crushed (optional)

DIRECTIONS

1. To make the coffee in a percolator: fill bottom reservoir with cold water. Add coffee to basket (about 6 to 8 coupes per cup), place chamber and tube into the percolator. Add coffee to the top chamber (about 2 teaspoons per cup), and place the percolator over medium-high heat source (gas, electric or induction stovetop). Once water is boiling, adjust heat to medium-low, and boil for about 5-7 minutes.

2. Combine the coffee and Amaretto in a shallow bowl and set aside.

3. In a large bowl, using an electric mixer with whisk attachment, whip egg yolks and sugar until thick and light in color, about 5 minutes. Add mascarpone and vanilla extract, and mix until smooth. In a separate bowl, whip heavy cream with powdered sugar and Amaretto until it holds stiff peaks. Fold the whipped cream into the mascarpone mixture gently.

4. To assemble the parfaits, cut ladyfingers in half and dip each half into the coffee mixture for just a few seconds. Place 3 halves in the bottom of each parfait glass. Top with a heaping quarter cup of filling. Repeat process with another layer of ladyfingers and filling. Cover each dish with plastic wrap and refrigerate at least 2 hours.

5. Before serving, top with toasted almonds and crushed amaretti cookies.

Yogurt Berry Parfait Recipe

Ingredients

1 cup sliced strawberries (fresh or frozen)

1 cup blueberries (fresh or frozen)

1 cup plain nonfat yogurt

Directions

Place almonds in a small sauté pan and toast on medium heat for 3-5 minutes, stirring often, until golden brown. Cool almonds.

Combine berries and 1 ½ tsp Truvia Original Sweetener Spoonable, or 2 packets of Truvia Original Sweetener in a bowl and mix well.

Place yogurt, 1 Tbsp of Truvia Original Sweetener Spoonable or 3 packets of Truvia Original Sweetener and almond extract in medium bowl and mix until combined and yogurt.

Assemble 2 parfait or water glasses. Place 3 Tbsp fruit into the bottom of each glass.

Top fruit layer with 3 Tbsp of yogurt mixture.

Repeat the layers and finish with a dollop of yogurt mixture on the top. Chill.


1. For amaretti, preheat oven to 350 degrees F. and line a baking tray with parchment paper.

2. In a separate bowl, whip egg whites until foamy, then gradually add remaining 1/3 cup sugar. Whip until whites hold a stiff peak. Stir in almond mixture and add almond extract. Shape teaspoonfuls of dough into balls, wetting your hands with cool water to prevent sticking. Sift icing sugar over cookies and bake for 15 to 18 minutes, until lightly browned. Allow to cool, then store in an airtight container.

3. Sift flour, cornstarch, cinnamon and 1/3 cup of sugar and lemon zest over ground almonds and toss to blend.

Almond Cream

1. For almond cream, stir mascarpone, sour cream and brown sugar together to dissolve sugar. Stir in extracts. Whip cream until a soft peak forms and fold in. Chill until ready to assemble.

Cherries and Assembly

1. For cherries, toss cherries with Kirsch and sugar and let sit for 5 minutes.

2. To assemble, place one amaretti cookie on a plate. Add a dollop of almond cream. Top with another amaretti cookie. Top with another dollop of almond cream, a sprinkle of toasted almonds and then a spoonful of cherries. Repeat to make 4 servings in total. Serve.

Ingredients

Parfait Lollies
600 g banana
2 x vanilla pods, seeds scraped out
100 g almond butter
30 g pitted dried dates, softened in 50 ml warm brandy
3 Tbsp (45 ml) honey

Chocolate Dip
200 g melted white chocolate
60 g toasted almond flakes

Orange Blossom Honeycomb Crisps
1 ⅓ C (330 ml) castor sugar
½ C (125 ml) honey
6 Tbsp (90 ml) water
⅛ tsp (0,125) cream of tartar
1 tsp (5 ml) apple cider vinegar
1 ½ tsp (7,5 ml) bicarbonate of soda
½ tsp Maldon salt
2-3 drops orange blossom water

House Cocoa and Avocado Butter Spread
140 g avocado, mashed
¼ C (60 ml) cocoa powder
1 tsp (5 ml) vanilla
2 Tbsp (30 ml) honey
1 C (250 ml) almond milk
150 g melted dark chocolate
150 g almond butter
11 dried pitted dates, soaked in warm water and drained

To Serve
extra sliced almonds


How to Make Almond Butter

To make this homemade almond butter recipe, you’ll need 4 things:

  • Raw almonds – We’ll start by toasting them in the oven to bring out their nutty flavor. This step also makes them easier to blend.
  • A food processor or high-speed blender – To grind the almonds into a smooth, creamy nut butter.
  • Sea salt – If you like, you can skip it and make unsalted almond butter, but I highly recommend adding a pinch or two. It gives the homemade almond butter a richer, more complex flavor.
  • A neutral-tasting oil – Only if you need it! If my homemade almond butter looks gritty and isn’t getting smooth, I’ll add a little oil to help loosen it up.

Once you have them handy, here’s what you need to do:

First, toast the almonds. Preheat the oven to 350°F and spread the almonds on a parchment-lined baking sheet. Bake them for 10 minutes, or until they smell rich and nutty. Remove the sheet from the oven, and allow the almonds to cool slightly.

Then, transfer the roasted almonds to a food processor or powerful blender. From here on out, you’ll just be processing/blending the almonds until they transform into a smooth nut butter. But heads up – this will take some time, about 15 minutes total. Stop regularly to scrape down the sides of your food processor or blender and to give the motor a break.

At first, the mixture will be crumbly and chunky.

Then, it’ll thicken into a ball.

Finally, it’ll become smooth and creamy! If the mixture is still thick and gritty after 15 minutes of processing, add a neutral oil, 1 teaspoon at a time, to help it blend.

Season to taste with sea salt, and enjoy.

4. Repeat the layers of yogurt, fruit and toasted oats and finish with some flaked almonds.

Now about this toasted almond granola! Flavors of vanilla and coconut are front and center. Toasting the oats and almonds adds a wonderful depth of flavor and lots of crunch. This granola has that irresistible sweet/salty/crunchy thing going on. The chewy, intensely-flavored, sweet and tart dried cherries are the perfect counterpoint for the toasted crunchiness of everything else.

By the way. If you&rsquove never cooked with cardamom, it&rsquos a wonderful spice that adds a lovely aromatic note to baked goods.

HOW TO EAT THIS TOASTED ALMOND GRANOLA

  • Have a bowl with milk or yogurt for a delicious nutritious breakfast.
  • For a healthy, energizing afternoon snack have a small bowl of vanilla toasted almond granola with your tea or coffee
  • This granola is great for dessert too. If you want to dress up a bowl of ice cream, heap some vanilla toasted almond granola on top. Yum!
