I said that I don't bake anything in the oven on these heats, but I seem to be able to refrain when it comes to cakes… especially with cottage cheese :). Initially I wanted to make the cherry cake but I only found cherries. You can use any seasonal fruit (strawberries, apricots) and if you think to wait until winter :) exotic fruits.

  • 6 eggs
  • 6 tablespoons sugar
  • 6 tablespoons flour
  • 3 tablespoons water
  • 1 knife tip baking powder

  • 500g cow's cheese
  • 500ml milk
  • 1 sachet of vanilla pudding
  • 15g food jelly
  • 3 tablespoons sugar for pudding + 3 tablespoons sugar for cheese
  • 2 sachets of vanilla sugar
  • 250ml fresh
  • 50g white chocolate

  • about 1 kg of cherries
  • 1 sachet of red gelatin

We start with the countertop: Beat the egg whites hard foam then add water and mix. Gradually add the sugar and mix until it melts. Gradually add the yolks, mixing well after each one. At the end we put the flour mixed with baking powder and mix with a light wooden palette so that no foam is left. Bake in a 25 × 39 form, greased with a little fat and lined with flour, on the right heat for 15-20 minutes.

We test with the toothpick and if the top is baked, let it cool and then cut it in half horizontally.

Until the top cools, prepare the cream: In a saucepan, prepare the pudding according to the instructions on the envelope and after stopping the fire, add the gelatin dissolved in 3 tablespoons of cold water. Stir in the pudding until the gelatin dissolves completely and let it cool.

Cheese together with 3 tablespoons of milk, sugar, vanilla sugar mix well. Gradually add the pudding and mix, then the whipped cream and grated chocolate. Stir and add a little more vanilla essence.

Assemble the cake. Put the first part of the top, then half of the cream, the second half of the top and the rest of the cream. Place the pitted cherries on top.

Put the cake in the fridge for 3 hours then prepare the red jelly according to the instructions on the envelope, take the tray out of the fridge and put the jelly with a spoon until it covers the cake completely.

Let the cake cool for 10 minutes and the gelatin hardens well, then finally we can cut it into slices.

One slice for me, two for my husband, two for my boss :), more for my colleagues… less cake in the tray… does anyone want more? I hope not :)).

In order for the sweet cheese cake to be delicious, we also add a homemade apricot jam and something incredibly good will come out, a very light cake.

125 ml milk
125 ml oil
1 baking powder

1 lemon (grated peel and juice)

350 g fresh cottage cheese
2 eggs
5 tablespoons powdered sugar
1 tablespoon vanilla pudding
1 sugar vanilla bourbon
rum essence
2 tablespoons lemon juice
lemon peel

Method of preparation :



First prepare the dough by mixing whole eggs with powdered sugar and salt until it doubles in volume.

Gradually add the oil, warm milk, lemon juice and grated peel, and finally flour mixed with baking powder.

Prepare the tray from the oven, lining it with baking paper, which we grease with a little butter.
Prepare the filling, separate the two egg whites and beat them with lemon juice, then add 2 tablespoons of powdered sugar.
Mix the well drained cheese with the yolks and the remaining 3 tablespoons of powdered sugar, then add the other ingredients: vanilla sugar, lemon peel, rum essence and vanilla pudding.
We mix the apricot jam with a fork to thin it out, if necessary we heat it a little and then we put it in a nylon bag to which we cut a little end.
Over the dough from the lined tub we put the jam in the form of a grid:

We put the mixed cheese in another notched nylon bag at one end and we put the cheese over the jam.

Put the tray in the preheated oven at 160 degrees, until the cake is browned and passes the toothpick test, about 30-40 minutes.

Let the cake cool in the pan, then portion it and powder it with powdered sugar on top.
